    Been getting into chicken recently - butterflying and bashing, The greaseproof is good idea of a robust material to use when hitting and handling the meat. All that surface area would be great on a griddle pan. :)

    I don't know about Greek style,we put the whole thing in the over with potatoes usually...But it looks delicious and crispy,it needs less oil too!!!🤤

    Obviously being a Barrister is a fine career choice, I recognise that knife... and the Mother of all Pans. Just a comment, no Judgement involved. Piri Piri is South African Chilli fyi. No Herbs.
    Thank God you didn't beat the chicken with 'Spikey'. Those should not be sold. As for 'Onigano', no sir, that is Yankee-Speak. Or-E-gan-O. Sorry, but in cooking I get 'picky'

      So, A Great Recipe for a very swift meal. Well done for Frying and Steaming at the same time. Thar 'Range' is also Epic...but you two deserve it.

      This is why I popped back into the comments. I'd say everything touched after that brief rinse with water now needs cleaning, real cleaning (soap) Could it be that the chicken he gets is so fresh there isn't any chance it has Salmonella on/in it? England's fresh food pretty much goes out to customers as soon as its picked/slaughtered. In the US it takes a lot longer to reach the stores. Hmmm? Just an idea 🤷‍♀️

    No need for oil? Skin side down, is adequate. When You heat these oils they oxidise and can become carcinogenic? Even olive oil!
    It's actually a lot better to cook saturated fat, far safer?
    Other than that looks very nice. 🙂
