    Recipe: Tomato, Apple and Cheese Salad | Summer Salad
    Serves 2
    Ingredients:
    362g (12.8 oz) of tomatoes
    1 sweet and sour apple, 163g (5.7 oz)
    90g (3.2 oz) of semi-hard cheese
    1 teaspoon of grated garlic
    5g (¼ cup) of fresh parsley
    2 tablespoons of mayonnaise
    ½ tablespoon of lemon juice
    ¼ teaspoon of pepper
    1 teaspoon of salt or to taste
    Instructions:
    1. Cut the tomatoes in half, remove the seeds, and cut into small pieces.
    2. Peel the apple, core, and dice. Transfer to a bowl, add lemon juice and mix. Set aside.
    3. Dice the cheese and chop the parsley.
    4. In a small bowl mix the mayonnaise with garlic.
    5. To a large bowl, add tomatoes, cheese, apple, garlic and mayonnaise mixture, salt, pepper, and 1 tablespoon of parsley. Mix until combined.
    6. Serve immediately and enjoy!
    Notes/Tips:
    - The salad can last in the fridge in an airtight container for up to 3 days.
    - Coriander can be used instead of parsley.
    - Natural yogurt can be used instead of mayonnaise.
    - Any semi-hard cheese can be used for this recipe.
