Thanks for the comment. I made mine in a 9x9 pan and they are pretty thin. If you double it, I think you will get a pretty thick center if you bake in a 9x13 dish. As for the mess, just make sure you cook it thoroughly due to the egg content. I also enjoy the gooey middle, but I also love a crispy top that offsets the texture. Is this recipe easily converted using a gluten free flour? My dad loves pecan bars but is Celiac and I'm looking for an easy GOOD recipe to bake these for him.
Absolutely. You could use gluten free flour and try coconut oil (you can't taste the coconut) Or gluten free I Can't Believe It's Not Butter - Vegan to make the crust. Or you can try making with gluten free graham crackers for the crust. I think that would give it an interesting base to work with. Good luck and let me know how it works out. I'm sure you know that butter does not take "a few minutes" to melt in the microwave. Also, why don't you use a spatula to get out all of the corn syrup/egg mixture from your bowl? But nice recipe - Thank You!
