I've noticed you only put 4g of salt, it's only 0.8% of the total flour, normally the % of salt is app. 2%. Please advise if there's any reason of keeping this low percentage of salt in the dough? Thank you.
Hi Betty, I add less salt than some other baker’s recipes recommend. That’s just me and adding 4g salt to this bread is enough. I don’t think the taste is much different even you add a little more salt. You can add more if you want. Thank you so much for watching the video and the comment!😀😀😀😍😍😍🙏

I understand that salt is not for flavor in bread making, it also has a function of balancing the yeast’s fermentation, controlling the fermentation going too fast, and tightening the gluten a bit. Just wonder with lower percentage of salt would make the dough’s fermentation going a bit fast. Thanks anyway.
@@bettychan1885 Yes salt affects fermentation in bread making as well as taste. Not adding salt to the dough make dough faster fermentation (this can cause some gluten develovement) and adding too much can slow down the fermentation. I haven’t tried side by side one with more salt and one with less salt. Intresting to find out. I have seen some recipes recommend 7 to over 10g salt to this bread size and I am not sure how much it will slow down the fermentation time.
