**Room temperature is around 75-78F/24-26C - after 3 sets of SF 3.5 hours or longer fermentation until 80-90% rise. If the room temperature is higher or lower the fermentation time can be shorter or longer**

**실내온도 75-78F/24-26C 3번 펴서 접기한후 3.5시간 거의 80-90% 부피가 늘도록 발효해요. 만약 실내온도가 높거나 낮으면 발효시간이 짧거나 길수 있어요**

I prepared starter/levain (70% hydration starter/levain) 40g starter, 22g water and 40g bread flour in this recipe. If you will be using 100% hydration 100g starter/levain you would add 325g water to make 75% hydration dough.

I put the dough in the freezer before scoring to keep the it’s shape better and easier to score especially high hydration dough. Baking time is a little longer when freezing the dough.

@CastleCooking You are very welcome. Store bough Brioche is nice, but i dont like the ingredients list. No butter in it. You should definitely make brioche bread. It can also put chocolate inside. Or put cinnamon, too. And the old bread can use it to make french toast. 😋
@CastleCooking Whole food sells 3 different kinds. One is chocolate, plain a d custard if i am not wrong. Look it up 😀cant wait for your sourdough brioche video. ❤️

I just looked up the listed brioche ingredients. Wow I didn’t realize how many ingredients they listed other than homemade bread would use. I would never even consider them unsing in bread making at home.
I am not sure if you have seen this recipe. I filled enriched dough with apricot jam and it is so good! Chocolate, cinnamon or custard would be good too!

@@CastleCooking Yes. Store bought bread they put lot of unhealthy ingredients in it. Nothing is better than homemade. There are only 2 brands that I buy when i dont have time to make. Is Organic sprouted bread. 😀 I also LOVED Korean cakes they are so light and not too sweet.
