Easy Homemade Rasmalai Recipe

    Rasmalai is a royal and delicious bengali dessert, Rasmalai is one of our absolute favorite. Hope you guys will like this easy to make homemade Rasmalai Recipe.
    Malai
    Ingredients:
    Whole milk 3 cup
    Crushed Almonds 1 tsp
    Crushed Pistachio 1 tsp
    Cardamom 1/2 tsp
    Sweet Condensed milk 1/4 cup
    Directions:
    In a large pan, heat milk until it comes to a boil. Keep stirring so milk does not burn at the bottom. Add sweet condensed milk, crushed pistachio, almonds and cardamom powder. Cook at medium heat until milk is reduced to 2 cups.
    Channa
    Ingredients:
    Whole milk 1 litre
    White Vinegar 1/4 cup
    Water 1/4 cup
    Corn starch 1/2 tsp
    Directions:
    Boil milk in a large saucepan at medium flame. Keep stirring so milk does not burn at the bottom of the pan. Once the milk comes to a boil, turn off the heat and add vinegar + water (mix vinegar and water) in little amounts until the milk curdles completely, gently stirring. You will see the water turning slightly green as the milk curdles.
    Drain excess water from channa using a cheese cloth and wash it well under cold water, to remove the acidic vinegar taste. Squeeze the excess water from channa.
    Let it rest for 15 mins. Knead it well for 10 minutes with corn starch and roll them into small cheese balls. Cover and set it aside.
    In another pan, add 4 cups of water and 1 cup of sugar. Let it come to a boil at high heat and add the cheese balls. Cover with lid and let it boil for 20 minutes. The cheese balls will double its size.
    Turn off heat and let it cool down for 10 mins.
    Once it has cool down, squeeze the water from each cheese ball and place it on your serving bowl. Repeat for all cheese balls. Add warm malai on top of cheese balls and let it rest for couple hours. Garnish with crushed pistachio and almonds.

    I tried this and it was amazing!! I added 3 tablespoons of sugar in the first milk mixture because i wanted it to be a little bit sweeter.
    But overall, all measurements are correct!! Thank u for uploading this ❤❤

      I put 4 cups of condensed milk and 6 tablespoons of sugar, it came out as diabetes.
      What's sad is I'm not joking.

    Hello, thanks for the video. After adding the cheese balls in the (sugar water) last step, should I let them boil for 20 minutes on low, medium or high heat? Also, is it okay to use distilled white vinegar? Thanks again.

    Once channas boiled in syrup water , where did u keep the channas, here I saw a glass bowl do we need to keep in the cold water or that boiled syrup before squeeze & putting the first made nuts milk on it? Pls clarify

      Kneading is very important. Keep on kneading till your hands gets oily from the channa. Thats the key

      keep syrup thin throughout cooking time by adding hot water every few mins. thick syrup hardens the chenna and i have cooked paneer which wasnt oily but instead a sticky pasty texture and it didnt harden at all :)

    I have a doubt.. after making paneer we should rest that for half an hour or immediately we can start kneading it ??

      hello sorry late reply, i recommend waiting half an hour because its too wet and it wont form smooth paneer dough. ive made it and i failed when i ddint rest it so please rest

    My chana was too crumbly and couldn't get the perfect balls even after 15 min of kneeding. Don't understand what went wrong 🙁

      Chana was not properly dry dear
      Put something heavy on chana about 30 minutes and than try to knead your chana or watch on cook with Eeman nd Ayan it will be helpful Thanks dear

    Which milk to be used? Cow's or Buffalo's? I saw few other recipes, they have used cow's milk for Chenna and Buffalo's for the masala doodh part

    Tried making this but my channa were very soft, and disintegrated in the sugar syrup while cooking! How did you get your mix so firm??

      I found the solution: it very much depends on the percentage acidity of your vinegar. Initially I used British white vinegar which has a low-percentage acidity. I found a very good white vinegar with a 10% acidity and tried again. SUCCESS! Brilliant result, perfect channas, delicious Ras Malai!

      @@safiyahish9103 Absolutely right and,I whould say,if we make perfect paneer,fat ,nice,rested dry...we shouldn't need corn starch ,it makes it gummy texture compared to just perfect paneer, but is very difficult to obtain a perfect ball
