Sounds like it needs work but if I'm ever in London I'm turning up around these sides, he's a real one. Gladly pay more for good chicken.

fun fact: pink chicken is not always caused by undercooking but sometimes due to the marinade used and how long it has been left for before cooking the chicken
It’s more to do with how the animal was treated throughout its life but more likely the bruising is from heavy handling the animal before slaughtering it.
Definitely not a marinade colour leak. I know what those look like and the potential shades they'd produce, so unless man are adding beetroot to the marinade, which is never the case, it would more likely be as my man said above or some kinda haemorrhaging.
