Hello, what type of wok is great for chinese cooking?I have a carbon steel wok but it's very difficult to maintain.

I wish you would have shown how to select clams and filter the bad ones out.
If you have a Costco nearby, they have pretty good and fresh clams. The clams shells should close when you buy them but must open wide once cooked. Any unopened clams after cooking should be discarded.
