Watching from my hotel in London. I visited Bimber Distillery yesterday, a tiny craft distillery in London producing single malt in Gin country. The micro and craft character of it made me think of what is going on in Texas. Different in flavor profile but similar in philosophy and mentality. I talked to the owner about what is developing in the Texas Whiskey Association and suggested they something similar with their fellow whisky craftsmen. I have a special place in my heart (and liver) for Ironroot Republic Distillery and really enjoyed my tour with the Lickerish family.
Having watched his palate mature since his first taste of Brimstone on the channel, Rex has gone from mooch to semi-sommelier. I occasionally find myself amazed at the level of some of his tasting comments. Perhaps an aluminum somm's necklace is in order to mark his achievements?

I actually really like it when somms disagree. I could be dead wrong here but my impression of a sommelier or connoisseur's job to create a drinking experience for a customer is a creative drive, similar to a chef preparing a meal in a way. Sure, there are some rules you always want to follow but it's ok to have different opinions or different styles. Also, tell all the sensitive people in Canada that it's customary in the states to go against the rules. Today is the fourth of July and I'm drinking Wolfburn. If Scotland ever gets it's own independence day maybe I'll crack open some Canadian.

I wasn’t a huge fan of the 12 but think a few more years in a barrel could make it worthwhile for me so I’ll try to find the 15. Definitely better than Macallans you get offerings though. Bring back the bagpipes.

Ok. A question for Rex. I've been trying to learn the art of mooching, with you as my role model. I made a turntable (lazy susan) for my neighbors, and as payment they supplied me with several bottles of scotch: Abunadh, Uigeidahl, Glenlivet 18, Classic Laddie, etc. Unfortunately, the day after they delivered payment, the turntable warped into something resembling a pringle, and wouldn't turn anymore. So the question is: what's the correct Mooch remedy? A full refund? Give the empty bottles back? Replace with a new one and only charge a couple more bottles?

Question: I have a family member who is in the fuel alcohol business, they generate massive amounts of alcohol for the various refineries, from truly massive stills. They also sell off alcohol to producers of spirits. So my question is, can you distill your mash-bill separately? Can you mix for example a Corn, wheat, barley, and rye alcohol and create a bourbon as long as you put it in a unused white oak barrel and correct proportions?

Go to a whisky bar and try a few by the shot - cheaper than a whole bottle, and it lets you know if it is worth trying more in that direction. One suggestion: id does not look like you have tried a sherry Whisky. A great, and great value one is Glenfarclas 10.

Just tried a port finished bourbon(St. Augustine), a bit of peat would definitely go nicely with it.
