So, if you have too much egg yolk in it, no matter how long you beat it, the egg whites (and yolks) will never turn into whipped cream. Keep the bowl clean as possible and avoid oil/butter on it, and try not to add even a speck of yolk!

Powdered suger is better. It dissolve faster and better. Granulated suger takes a lot of time and doesn't always dissolve completely
