    A note about raw egg whites...Yes, it is safe and very common to use raw egg whites in royal icing. As with anything containing raw egg this royal icing carries a very slight risk.
    If you don't personally feel comfortable using fresh egg whites, I recommend using pasteurized egg whites that you can buy in a carton or use a royal icing recipe that uses meringue powder which you can find here: ua-cam.com/video/yft47AzYiWk/v-deo.html

    You’re a LIFE SAVER!!! It’s 5am and I just realized I didn’t make enough icing, ran out of butter and have no whipping cream. It’s my friend’s birthday and we made arrangements to surprise her with the cake in a few hours 😭😭😭. I’m honestly so relieved

    I watch your video and I think I finally got the recipe I needed. I’m making a birthday cake for my daughter tomorrow and I’m planning to use this recipe. I had a question though. May I use vanilla extract instead of lemon juice or can I use both?

      Great! You can add lemon extract but you’ll need the lemon juice because it helps set the egg whites and keep them stable. I also have a recipe that uses meringue powder instead of egg whites if you prefer that! Just search royal icing on my channel! 🙂

      I don’t think orange will be exactly the same because it isn’t as acidic as lemon. I think you can go without it though or try my recipe for meringue powder royal icing on my channel which is so easy!

      No I don’t think so, I believe it is the acidity unique to lemon juice that is important! If you want an even easier recipe for royal icing check out my video that uses meringue!

    Because you added lemon juice does this mean you can’t add any other flavor like almond or vanilla? Or can you leave out the lemon?

      The lemon juice helps to harden and stabilize the royal icing. I would say you could also add almond or vanilla along with the lemon and it would still taste good! You could also try using meringue powder royal icing, which doesn't have lemon in it, if you want to add a different flavor. It is really easy and I have a video about how to make it!

      Thank you! You can definitely use cream of tartar, it helps stabilize your egg whites. I don't bother with it because if I make royal icing with egg whites I usually use it the same day while it's fresh and I have no problem whipping my whites. Hope that helps!

      Yes, I don't have a regular buttercream recipe video I don't think but buttercream is a great frosting to use that is fairly temperature stable. You can search for a good one online!

    Is the lemon juice just for taste or does it have a specific purpose? Can I use extracts instead?

      You can add extracts for flavor in addition to the lemon juice, but lemon juice with egg whites helps stabilize them and creates structure. So it helps them stay firm :)

      Yes! For this I suggest using meringue powder rather than egg whites, that's just what I prefer. Here is a video on creating flooding icing:

    Actually, Kitchen aid mixers or any stand mixer for that matter, are extremely powerful and you should unplug them to work with your hands on the attachments. I have worked with machinery my whole life. I am old. The first thing my dad taught me was at no time do your fingers leave the end of your hands. I run table saws, miter saws, drill presses, etc. and never do any work on them without unplugging them. Even a lawn mower should have the spark plug removed when working on the blade. It's never ridiculous to be safe. Unfortunately, I saw several accidents when I was working and they were all because someone took a short cut. So your fear of the blade is very sound. Always have respect for mixers, food processors, blenders, hand mixers, slicers and so on. They can seriously hurt you and I for one for sure would be so upset because I really enjoy your videos and especially because I don't want to see anyone hurt. Thank you so much for this recipe. I have learned so much from you. Chocolate and frostings are my nemesis. I need all the help I can get when it comes to those two items. Again, thank you.

      Amen!! I just picture my fingers getting caught in the whisk and it turning on ughhhh. So I agree with you. Those types of accidents can be prevented and it's so sad when people get hurt!       @@BrittneeKay I used to decorate cakes for money when I was in my teens. My aunt taught me how. My whole family does everything. Busy people. I use to be good at it but then life called me and I got away from it. A lot of the things I use to carry in my head I haven't used so I have forgotten them like my frosting recipes. Your videos are so helpful because they are bring things back to me. I did get pretty good at it in the old days but that was 50 years ago. Thanks again Honey for your sharing. I really appreciate it. Stay well and keep those fingers away from those beaters when it's plugged in.

      In this recipe the lemon helps stabilize the egg whites. You can also add vanilla, or if you'd like you could use a meringue powder recipe and add vanilla for flavor!

      No, royal icing is mainly for decorating. It dries hard and isn't that most tasty icing. I would use buttercream to frost a cake!

    Hi is there any way to make the raw egg whites safe? I'm reallt concerned with Salmonella especially will do this with my son. Thanjs.

      @@mohana-ivanaraymond3820 Hmm I am not sure why you can't find meringue powder. Is there any way you can order it online and have it shipped? I totally understand the worry about the egg whites, but I really do think they are pretty safe to eat. If you are worried though I would recommend using a different icing! If it's for a cake you can use buttercream! If you want to decorate cookies you can always use chocolate or ganache, and those taste better anyway! :)

    Great video! You make it look so easy! Do you know if instead of adding lemon juice you could use cream of tartar for stabilization, and then have it flavored with vainilla?
    Also, do you know if there's an exact ratio of egg whites to sugar? I'll be using the pasterurized ones out of a carton and need to weight them anyway. Thanks!

      Yes! You can definitely use a recipe with cream of tartar instead of the lemon and use vanilla to flavor. Since royal icing is fairly simple, you can just search a recipe online and give it a try! As far as egg whites to sugar, I am not sure, but because royal icing is so sweet already if I were using carton egg whites I would just use the same amount and with a fresh egg. There are about 1.25 oz of white in 1 egg. Hope that helps!! :)

      Yes you can put a bit of flavoring in it as long as it doesn't change the fluidity and texture. I've never heard of putting corn syrup in it...what is that for?

      @@kathymyers-host6187 Oh in that case I wouldn't. Royal Icing is super sweet already so you don't need it for that. As far as glossiness, it will dry a bit matte but you can brush on some edible pearl powder for some extra shine. If you add corn syrup it will most likely just mess with the texture and cause it to not set up properly! :) :)

      Royal icing is more for decoration than taste. It is great for piping and detail work and dries hard. It’s not the type of icing you sit and eat 😄

      I would say no because the lemon is not for flavor it is used to stabilize the egg whites in the recipe 🙂

      Royal icing is meant just for decorations generally, like piping and smaller things. I would not frost a whole cake with it, it dries completely hard as a rock!

      It's 1 lb of sugar for 2 egg whites...1 lb is about 4 cups of powdered sugar. No regular sugar will not work in frosting, it must be powdered!

      Yes you can! I can't say I know for sure how long they'll last. I would make them just a couple of weeks in advance and store them in an airtight container once they've dried.

      I'm not sure because I have never tried that! Google does say vinegar can be used as a substitute for lemon juice, so you could give it a try and see how it goes!

      1 lb of powdered sugar is usually about 4 cups. I would start with 3 1/2 and add more if your royal icing doesn't seem thick enough!

      It doesn't dry instantly but it does dry quick! Depending on how thick you spread/pipe it on will determine how long. I would say usually it is completely hard within a half hour if you've piped it.

      Honestly, neither. Royal icing for me is more of a decorative icing, I never eat it. But you definitely can and you can add flavor into the recipe if you'd like. They both taste extremely similar...basically just like sugar!

      This is royal icing, made with powdered sugar. Does that answer your question? You can use it for cookies or decorating cakes!

    I have all those ingredients at home but does the egg white royal icing hardens if I put it in a piping bag and sit the piping bags in the refrigerator for a day would something happen or should I leav it outside the refrigerator?

      If you put it in a bag in advance it sometimes can lose its structure and get weepy (like looser and leak liquid). I would say whip it fresh before you want to use it! But if you have leftovers, you can put it in a covered container or if you do put it in a piping bag cover the tip with a damp cloth to keep it from getting crusty. Hope that helps!!

      1 lb of powdered sugar equals about 3 1/2 to 4 cups. Start with 3 1/2 and add until you get the consistency you like! :)

      That is a good question. Depends on how big and what you're piping. Just a guess for a random cookie size with just one layer of icing, maybe 20-30? I could be way off though because I've never measured, sorry!

    I forgot to sift my powdered sugar and I got a grainy chunky icing, isn't there any way to solve that? 💔

      If the chunks are really big push it through a strainer or colander or see if you can break them up while you’re whipping the icing!

      Yes they are raw but they are ok to eat. Also this icing is mostly meant for decorating and not eating. I also have a royal icing recipe with meringue powder instead of fresh eggs you can watch if you prefer that!
