I think Ester Winchester actually took me the most tries as I took so many avoidable hits throughout phase one and two, by the time I got to the crisscrossing hot dog phase, I usually only had a life or two left. It could just be me, but her phase one and two felt fairly long in comparison to other bosses.

The last phase of Saltbaker was actually the hardest part for me, but I refuse to use auto-aim weapons so that's probably why. Trying to hit the boss while the platforms are moving with spread and peashooter equipped was frustrating. And I would often take damage for using my parry-dash because the boss would move up above the platform I was trying to land on, so I would get bounced up to meet him on frame 1 of vulnerability, if that makes any sense.
I died a lot on the last phase from falling, trying to dodge the heart just sending me into the abyss. I also often took unnecessary hits during the miniscule third phase, always misjudging the hit box of the twirly salt thing.
I really think Esther’s the hardest on both modes. There’s so much shit on the screen at all times and your breathing room gets more limited as the phases go on. Maybe it’s just because I’m inherently worse at plane bosses… Chef’s fireball(s) rarely give me any issues. I had a way harder time with the other parts of the first and second phases, like those damn pepper shaker + mint leaves.

During the second phase of the moonshine level you can play as Mrs. Chalice and equip boomerang and stay on the middle platform while constantly shooting the dancer. You also have to dodge roll when the red notes are about to hit you without stopping your shooting, this will make the easiest phases of the whole game.
I S ranked mortimer freeze today and I found that spread is actually pretty good for his snowman phase, every time he takes out the freezer he can’t hit in front of him and the ice cube he shoots you just barely move to the side before it splits, the only downside is if you get unlucky with the popsicles but it saved me a lot of time
