I fell in love with fermented garlic cloves when I visited France years ago. I couldn’t get enough of them, but of course you can’t find them here so I need to make my own. YES PLEASE!!!! The best thing about this recipe is that it works with frozen corn. I'm not able to grow my own corn yet. So I have to buy big frozen bags of corn from Costco that clog up my freezer.😢😂
Just opened the jar after the 48 hours for a quick nibble and LORDY this is good! I made it intending to use it with some black bean and rice burritos…if I have any left after gulping great spoonfuls of it! I didn’t have chili seasoning so I used some homemade adobo powder and I did use a jalapeño and cilantro. Soooo good!

It's probiotic by-products. (not digestive waste because bacteria don't have digestive systems like humans). By-products such as enzymes, vitamins and other organic compounds. Not to worry, it's normal.

I just read articles that claimed fermented foods cause cancer. They stated Asian countries had the highest rate of stomach cancer as they claimed it was due to eating too much of fermented foods. Have you seen such reports? I'm just starting into fermented foods and I really enjoy it! I figured since you only eat small amounts at a time it would be fine. Yes you can, but if the can is lined with the plastic, the chemicals in the plastic could hinder fermentation. Feel the inside of the can to tell if it has the plastic lining or is straight up metal. If it does have the plastic lining, you can still give it a try because it's not a 100% guarantee the fermentation will be affected. Also, The extra salt in the canned corn may over-salt the salsa so add just a little less salt to the brine to try and compensate. Good luck!👍😊
My ferments always come out way to salty. My beet kavas and the kraut are to salty to eat or drink. Can I save them? I wanted to use the brine to make cheese but I'm afraid the cheese will be to salty. Help!
