Coconut Cream is much thicker & higher in fat content compared to coconut milk

What can we use instead of galangal and kaffir lime leaves?
Can use fresh peeled ginger & lime zest or dried lemon, but it will not taste as same.

Is coconut oil must, any other oil will be okay ?
Depends how coconutty you want it. I'd say for the stirfrying veggies especially something like the onions (which is more like another aromatic tbh] you'd want coconut oil. But every other veggie and the chili oil? A neutral oil is perfectly fine.
