When using an existing colour palette they are usually carefully crafted to work well and have balanced colours. So yes, using a palette would prevent you from having to concidering the value balance. But when creating assets with free colour selection its important to keep in mind value differences in the colours.
Just found this video, and it's pretty nice. I would love to know more about how you fixed that one example room that had inconsistent shading. I understood the problem, would have loved some details on how you fixed it (you know, values, ranges, etc)
You don't want to bring in too many shades of into your palette. Too many colors on such a limited space will become noisy. Focus on getting nice clusters and readability!
