Wario could also get a collection of costumes from the Wario Land series and Master of Disguise. Peach now has costume options from Showtime.
I feel like Captain Toad/Toadette being separate characters makes more sense, because in the games, their backpacks weigh them down so much that they can’t jump, meaning they’d likely be in the medium weight or even heavy weight class.

Villagers would have a select amount of customization, and Inklings would be just the same because both Animal Crossing and Splatoon have an inherent interest in fashion, so it's always right to push their cosmetics forward. Isabelle herself has her fair share of alternative outfits. In ACNL, she had a Summer and Winter outfit as well as events and casual outfits and some more added in ACHHD. In my opinion, they should make a hover kart and hover wheels set as a regular kart from when you go anti-gravity. They could also add differect styles/coloration effects for the anti-gravity hover with different characters. They should also add Cat Mario as a character and a mystery block item where you don't know what item it is until you use it. Also they should add 2-d karts and gliders as well as wheels to match the 2-d characters. There should also be 2-d Luigi, 2-d Peach, 2-d Toad, 2-d Yoshi, 2-d Goomba and 2-d Bowser. All having there own 2-d karts. They should also add Paper Origami Mario, Luigi, Peach, Toad, Yoshi, Goomba and Bowser who all have matching paper origami karts, wheels and gliders. And if they don't want to add different styles to all characters, they could add different color variations like they did in Super Smash Bros. Ultimate, instead! Also, if you want the Poltergeist in the game, add it with Gooigi!
I think, considering that Link's alts are his appearances in Breath of the Wild and Skyward Sword, it would only make sense to also have his appearances from Ocarina of Time and Twilight Princess, maybe even Majora's Mask, The Wind Waker or Link's Awakening. As for karts, I have an idea for an Epona kart and a Loftwing bike
So I'm making this comment from the end of the characters section, and I find some of your picks...let's call them "interesting, but I disagree to varying amounts and would like to offer alternatives". The new enemies introduced in Wonder I'm not sold on being new racers, just going to get that umbrella out of the way. A second, smaller umbrella would be all the Koopa Bros. I think just having Hammer Bro is enough. A third, slightly larger than the last umbrella would be all of the extended Nintendo characters barring R.O.B. and Kirby...and maybe Olimar. In place of these characters, I'd choose Fawful, Peasley, Broque Monsieur, Syrup, and Mona. There's hardly any rep from either the Mario and Luigi rpgs or from Wario Land or Warioware, which seems strange to me. A few suggestions for battle stages, ones themed after Metroid, Zelda, and Pokemon I think would do great.

I feel like the baby characters could have baby variants of their older selves. A bit repetitive, I know, but Baby Rosalina could probably pull of Aurora Rosalina’s look fairly nicely, even though I pretty much despise Baby Rosalina.
I was actually thinking of a Minecraft one, the characters being Steve and Alex, the stage being the biomes you pass throughout the stage but if you really want to get classy then add the nether or stronghold so they can go to the end, the kart being the minecart, the wheels being clocks and the glider being the elytra, the items should be the potion of speed and leaping, the tnt and a crossbow with arrows, well,the skins? They should be the ones from smash BUT remember the Mario mash up world and skins on the switch? Add those skins to the characters, it would be awesome. Also remember when you said lakitu doesn’t have a variant except the one from Mario kart tour? What about the electric king Lakitu from super Mario galaxy two, would be awesome.
