Ive gotta say.. the Hungarian?/Polish? potatoes & sausage soup with the vinegar & paprika about 2 weeks ago, is SO VERY DELICIOUS. The family has requested I make again. I'll say....I added some good chewy dumplings- (cooked on side & dropped into boiling water & let the family take dumplings from separate serving dish AND then put soup on top. The dumpling & soupy stew(added thickener a tiny bit) were OUTSTANDING TOGETHER- MAKING FOR AN EVEN HEARTIER DISH. SO GOOD. BRAVO.
Had endless bowls of this at Olive Garden many years ago, it was so good I learned to make it on my own. I usually add some bacon to crisp up with the sausage and a bit of heavy cream once the kale is done. It's also a great base for a vegetarian dish if you remove the sausage and add an additional type of bean and some cauliflower.
I've been watching your videos for about a year but this was the first I tried to make. It is wonderful! We used canned cannelloni beans because it was what we had. The beans split a lot sooner than expected. If you make this with canned beans add a little less water and summer a little less time. I served it over fresh-baked gluten-free focaccia, as per international law.
I am SO happy to see that your stockpot is Cuisinart!! I am quite tired of seeing so many adverts pointed my way that are for "high-end" expensive pots and pans that are NOT always as fine as the more affordable Cuisinart. Thanks, Chef John!
Chef John, great recipe, i like canniloni beans also, but garbanzo beans will work also, i use kale for my greens, sometimes a splash of 1/2&1/2 in my broth. My wife is austrian/german & we live in northern kentucky, i'm irish from rural s/e Ky. but here there is a big population of german, greek , italians & all make great sausages, so i can get italian sausage, fresh & pre-ground without having to remove a casing, big plus, whether mild, medium, or hot. I made this with a few adjustments (I added a can of San Marzano tomatoes that I crushed by hand and then also added some chopped fire-roasted tomatoes. OMG, so awesome! I love your vids so much. I can't remember the last time I saw one and didn't get inspired by you.
A wet salad: Tall glass Crushed ice (hot) Pickled veggies, vermouth olives, pickled asparagus 1-1/2oz vodka 3oz to taste V8 horseradish Put the vodka, V8, horseradish and ice into a shaker. Shake it. Put the pickled veggies in the tall glass, pour your shaker over the top, garnish with olives and asparagus. Serve in a glass with a cocktail fork
Just tried this tonight. Mindblowing! It was delicious! I deglazed with vinegar as suggested - 2 kids and although it is cooked I try to avoid alcohol. Swapped chilli flakes for a mix of 5 peppers. Spinach works just fine with this awesome recipe. The highlight of our day in lockdown! Cheers from France. 😁

Made this today. Could only find the beans in a can, not dried. Used three cans and used some chicken broth I had instead of water. I am sure mine wasn’t as good as Chef John’s but it was still fantastic!!! Definitely will make again, quarantine or not.

I make everything separate first the sausages then drain. Make the Carrots celery onions add the sausages then chicken broth and tomato sauce. Add basil and other seasoning at the end I add the cannellini beans and kidney beans. ...comes out awesome

I make this every week. Beans n greens. I use 2 heads of escarole I sautee w lots of minced garlic when I can find it which sadly is far too seldom out here in Ca. I also use chic stock vs water, I add 1 cup of favorite DRY pasta & Ive recently added med diced roasted red peppers which add the perfect tang. That with some crusty garlic bread fughettabotit. The Romano is assumed. Last thought this costs me about 12-14 dollars & its 1 of the best damn things ( next to linguini w clam sc) I know. It makes 7- 2 cup portions. Write this down Im only doing it now cuz covid saturday nights allow. 2 cans cannelinis, 48 oz chic stock, 1.25 lb sausage sweet. Greens ( 2 hds escarole or a big bag of fresh spinach, kale or mustard greens - get what you can (in that order)), cherry tomatos - enough to make it look nice, roasted red peppers in a jar a good handful, about 1 head of garlic - serious - flavor & its good for you dammit! Popularity is overrated anyway, 1 tsp red chili flakes, 1 tbsp salt, 1 cup pasta of choice DRY. Start stock in lg pot, dump in cannelinis, med diced roasted reds & pasta. Sometimes I cut a handful of kalamatas in half & throw em in, bring to boil & simmer, get skillet hot & in order brown sausage, dump in pot, next greens, next cherry tomatos I cut em in half, cook till pasta just done. Box grater Romano at svc. This takes maybe 30 minutes its 2 bucks a bowl & its 1 of my ultimate comfort foods. Youre welcome.

A wet salad:
Tall glass
Crushed ice
(hot) Pickled veggies, vermouth olives, pickled asparagus
1-1/2oz vodka
3oz to taste V8
horseradish
Put the vodka, V8, horseradish and ice into a shaker. Shake it. Put the pickled veggies in the tall glass, pour your shaker over the top, garnish with olives and asparagus.

Mmmmmm! Looks delicious. I use kale as my green but I cook them separately and then put them in the soup for about 30-45 minutes before eating.
