It was my first time ever making chili but I trusted that it'd be good, because every other recipe of yours I've cooked has been awesome, and low and behold I won the chili cook off. Thank you for sharing your extensive experience and for making your recipes accessible for a novice in the kitchen who can't buy crazy premium ingredients and often times have make substitutions so I can cook with what's in the pantry. We don't have such sosages here in Israel, so i tryed it with ground beef, and its soooo delicious!!!! love it! thank you! it's the first time that i find a chili recipe that easy!
I made this chili last night and definitely can say it is the best chili that I have ever eaten. The Italian sausage (I used all hot sausage) really jumps out at you. Note: after the sausage has cooked a little, I used a potato masher instead of the wooden spoon to continue breaking up the sausage. This works very well. Enjoy!
Chef I just made this amazing chili! I was confused about recipe saying puree and video the said chopped tomatoes. I found puree at the grocer. I don't think it will make a difference. I used Elk Italian sausage. It was a sweet Italian. Omg best chili ever! This is making it in my permanent recipe file.
Every time I watch anything if his it makes my mouth water! Talk about a way to please your taste buds at any time of day anything you want! I shall be more like him and follow his recipes! To me that looks more like a stew than chilli. I'm from Houston, Texas and our chilli is a deep red color and Super thick. Rarely use beans and if we do its pinto. Even if you buy it from the store it will be super thick and tomato based. Which I love the acidic texture the tomatoes give. Especially when you pour the chilli on top of corn bread. Yum.
I can tell I live in Buffalo, home of the US's second largest Italian heritage festivals. I knew which Italian sausage was which before Chef John said anything and knew cannellini would taste the best with it. My nana made white chili with turkey Italian sausage(yes, that's a thing) and cannellini beans and it was always wonderful. I don't think there's a time where hot Italian sausage isn't on hand. Its sort of like cheese here, added onto any number of interesting dishes(at least by my brother).
I tasted for salt and it was bland and the oregano too over powering. Then I added the bell peppers and the beans and the story changed. The sweetness of the bell peppers and the savoryness of the beans gave an incredible taste. The taste and seasoning gets a perfect 10. Perfectly balanced. Awesome recipe. Holy smokes.

I love to read through the comments of a cooking video on UA-cam. There will always be a bunch of people with sticks up their butts acting up all offended because someone didn't cook according to their perception. Like all recipes are cut in stone, and like it's illegal or sacrilegious to change them according to your own tastes and preferences. Culinary is all about trying out different things and experimenting with different combinations of flavors, tastes and ingredients. Sure there are traditional recipes but even they changed in the course of history...

Italian chilli is my dad's favourite meal in the whole world and I'll be making it when my parents come to stay this weekend. The aroma of this chilli on the stove always brings back memories of my childhood in Italy. This recipe is a precious gem for sure :)
Chef John... My man! I made this chili without the beans. I was committed to this recipe for about 3 hours. Not knowing that this recipe need to be for 24 hours for the beans to soak overnight. Anyways I had it for lunch even though it was meant to be for my Super Bowl party haha. The first bite I couldn't get enough. Yummy! Thank you for this. I have to make some because it's half way gone already. Oops.
This sounds really good & I am trying it today!!!! I have never like kidney beans & use chili beans instead but they aren't all that great anyway. I have never tried cannellini beans before so I will probably use navy or great northern beans because I love them. I have never tried sausage in place of burger so that sounds good also. Especially with the mix of sweet & spicey!!! I know I made lasagna with sausage instead of burger & love it a whole lot more.

Perfect timing I just made 10 Lbs of Italian sausage, although it's been 80 degrees here in Calif so not the best time for chili. And yes Chef, chili must have tomatoes maybe no beans but definitly tomatoes.
Just tried this recipe last night. I've prepared about a dozen or so of your recipes and this is the only one that didn't go over so well. The problem was hot spicy it turned out. Followed the directions verbatim and we couldn't eat it because it was so hot

I would hate to waste these wonderful Italian sausages by breaking them up like that and boil them into something that looks like a spaghetti sauce but it is not but then hey, there'a another 921 recipes by Chef John that are more than amazing. Just comes to prove that no body's perfect, including Chef John. What a relief :)
Hey Chef! We made this chili for the big game and it was glorious. I only received complaints that the heat was too strong. If I use only sweet Italian sausages and dial back on the spices, that is sure to take away some of the heat. I want to make sure I don't take away too much flavor though, any recommendations on removing some heat next time while still maintaining the wonderful taste and texture? Thanks Chef!
You know what chef John, I don't think I've seen you cook one thing that I do not like. This dish reminds me of your lasagnia dish which also uses italian sausage meat yum!!!
Chef John you're right about the tomatos, they are a minor component, however down south we cook our chili for at least a few hours for the beans to break down.
Yes. Water dilutes the flavor. The extra oxygen from the carbonated beer helps tie the flavors together. Sometimes I use vegetable stock....NEVER water.
@@DR.VinnieBoomBatz I use red wine on my garlic bread with a mixture of butter, marscapone cheese and minced garlic. You have to brush the red wine on with a damp (not dripping) basting brush first...then you can add the butter, garlic and cheese mixture to the bread. It's fabulous!
I'm going to try this version with a mix of Italian sausage and kangaroo mince. As an Australian with Italian ancestry & a love of chili con carne, I don't see how this could go wrong. 🦘🍲

When I want something like this and have no sausage on hand, I use ground beef and pile in the sausage spices from my extensive spice/herb cupboard. it works in a pinch
You know it's funny. When I make my mild chili and take it somewhere it is always the first pot emptied. I always put hot sauce and chilli peppers beside it for those that prefer more spice but most people tell they like just as it is. Because it is not so hot for a change and they can really enjoy it.

The only way that I've ever been able to break it up like that is to constantly work it with a spoon while its cooking.
