Debbie's Dream Foundation Holiday Recipe LOW SUGAR Apple Crisp..Gastrectomy Friendly Holiday Dessert

  • Beetin' Genes Low Sugar Apple Crisp
    Yield: 8 servings
    Prep Time: 15 mins
    Cook Time: 45 mins
    Total Time: 1 hour
    Ingredients:
    Filling:
    4 large Granny Smith apples, peeled and thinly sliced
    1 tablespoon date syrup
    Juice of 1/2 lemon
    1/4 cup water
    2 tablespoons arrowroot powder
    Topping:
    1 cup almond flour
    1 teaspoon cinnamon
    1/2 teaspoon salt
    2 tablespoons vegan butter
    2 tablespoons coconut sugar
    preheat oven to 350.
    To a medium bowl, add filling ingredients. Stir until apples are evenly coated.
    Place apples in a pie dish in a spiral pattern.
    To a medium bowl, add topping ingredients. Work it with your hands until it has a crumbled consistency.
    Evenly sprinkle topping over apple mixture.
    Bake 45 minutes, or until the apples are soft and the topping is golden brown.
    Serve with sugar free vanilla or pumpkin ice cream.

    We discovered that we carry the CDH1 mutation in February of 2015. Surveillance is the route we chose as a strong family history of gastric cancer did not register in our family tree until recently. With signet cells found on 3 of Polly’s gastric mappings and the news of a distant cousin being diagnosed at stage 4, Polly made the decision to have her total gastrectomy in June of this year. Her recovery thus far has had minimal side effects. At four months post of she is feeling pretty good. This will be her first holiday as a stomachless person and she is looking forward to grazing on all the fabulous foods. Taylor is continuing with her gastric surveillance at this time and feels comfortable with this decision. Her Dr is keeping a close eye on her as she continues to lead a healthy lifestyle.     Yum! Just made this. It’s a perfect fall desert and satisfies my sugar craving without the bad sugar creating an insulin spike! Good job!!!
