Last time I made these I used an Aussie wagyu ms 9+ rib eye with an aged cheddar, mushrooms and jalapeños, and omg I’ll never do it any other way, also added a little beef stock and Worcestershire sauce n garlic to it on a Turkish foccachia bread, love your work Tommy
Tommy, both looked delicious. I am a big fan of removing the inner bread on my rolls as well. I like to mix the cheese with the peppers and onions over laying the cheese on top. I mix in a little pepper jack with the American as well. Just my preference.

Loving it, loving it, loving it! Griddles rock…but for a nice char on veggies and red meats without the oils that create a sogginess, I’ve incorporated into my cooking Arsenal a propane powered overhead 1500 degree sear station. Griddle pans fit perfect. It just gives a different “texture”.

As a born and raised Philly guy, I’d say that’s a pretty good looking sandwich. True Philly would probably have a longhot pepper instead of a jalapeño, but who cares. I like the idea of getting rid of some of the roll. Steak shops all over Philly use a variety of cheeses and veggies and add-ons. There’s no rules other than Rib-eye steak and the Cowboys suck.
As a Chicago guy, not a fan of anything Philly 🤣. As a fat guy, those looked damn good Tommy. Was thinking the provolone was gonna win out and was surprised by your outcome. Might have to try the white American one day. Good video, thanks!

I have cooked Philly steaks in a restaurant never butter always oil don't toast roll and use the right beef. One steak on a flat top or griddle should be done in 2 minutes.
Thanks Nickolas, I'd guess most resturants use oil because it's cheaper and won't burn as quick. That said, Ill keep that in mind for next time. Cheers and thanks for watching.
