    Tommy, you did a great job, thank you for putting the bread over the cheese to finish the steam through. I am team White American. We go to D'Alessandros in SW Philly or John's Roast Pork. No critique, you did the God of sandwiches justice🤘🏼🔥🤘🏼👍🏼🇺🇸🍻

    Cause I live and breathe this Philadelphia freedom... Yes I do. Jamming jazz and some Philly beatitude on those sangies. Great sautéed veg and nice griddles on steak. Eating good in the hood Tommy. Gotta love the first bite to the last. Flavorful city.
    Weather doesn't matter when you got the griddle clatter.

    Love the crunch sound on the bread, love crunchy toasted bread on Cheesesteaks. Better check to see if microphones didn't get overloaded when you took a bite, that was loud😉😋 griddle on!

    Last time I made these I used an Aussie wagyu ms 9+ rib eye with an aged cheddar, mushrooms and jalapeños, and omg I’ll never do it any other way, also added a little beef stock and Worcestershire sauce n garlic to it on a Turkish foccachia bread, love your work Tommy

    Tommy, both looked delicious. I am a big fan of removing the inner bread on my rolls as well. I like to mix the cheese with the peppers and onions over laying the cheese on top. I mix in a little pepper jack with the American as well. Just my preference.

    Excellent cook! I'm for provolone, on top. Funny, the best PCS I ever had was from a gas station in Atlantic City, and I've had em in Philly too. Worst (no surprise) was one wit Whiz (although, full disclosure) from a food cart at Texas Motor Speedway...

    Loving it, loving it, loving it! Griddles rock…but for a nice char on veggies and red meats without the oils that create a sogginess, I’ve incorporated into my cooking Arsenal a propane powered overhead 1500 degree sear station. Griddle pans fit perfect. It just gives a different “texture”.

      I got a knock off overhead steak searer off off Amazon. It is a Bighorn and was only a couple hundred vs ones they try to get several hundred for.

    As a born and raised Philly guy, I’d say that’s a pretty good looking sandwich. True Philly would probably have a longhot pepper instead of a jalapeño, but who cares. I like the idea of getting rid of some of the roll.
    Steak shops all over Philly use a variety of cheeses and veggies and add-ons. There’s no rules other than Rib-eye steak and the Cowboys suck.

    Great cheesesteaks I love making them my only problem is that type of roll is hard to find around here my fav combo is shaved steak onions peppers mushrooms poblano peppers and deli American cheese now I want a cheesesteak cheers 🔥🔥🔥

    I'm gonna fire some shots and say that the Philly Cheesesteak is overrated, over-played, and really isn't all that good unless you're hungry and just trying to pass time. 😂🤣 Now the New York Chopped Cheese is a whole other story and on a whole new level of pure awesomeness with great flavor that Philly can't touch! 😯
    This here is a fine Cheesesteak though Tommy! Cheers brother! 🍺

    I have cooked Philly steaks in a restaurant never butter always oil don't toast roll and use the right beef. One steak on a flat top or griddle should be done in 2 minutes.

      Thanks Nickolas, I'd guess most resturants use oil because it's cheaper and won't burn as quick. That said, Ill keep that in mind for next time. Cheers and thanks for watching.

    Why plastic spatulas, Philly you chop with metal ones,and as much as i like butter authentic was s squirt bottle of veg oil and olive oil mix,just saying,,my favorite was a cheesesteak hoagie with fried onions sauce mayo hot peppers and mushrooms at Rising Sun steak in Philly
