Made these pumpkin loaves yesterday so glad I doubled the recipe and got 2 loaves because they are so delicious! I’m enjoying these with a vegan pumpkin latte in the morning for breakfast and one slice in the afternoon as a snack. For anyone wondering if this is worth it or not, it is! Follow the recipe as is and you won’t be sorry. I baked mine for 50 minutes and left it to rest in the oven for 10 minutes then I took it out and removed from the loaf pan. I wish I had added pecans but I didn’t, next time I’ll add my pecans and perhaps even cranberries too. If anyone bothered to look at her blog about this recipe you would know she explains that freezing them is also an option and to use pieces of parchment paper in between the slices so that you can easily take one or two slices out and warm them up.❤ this pumpkin bread loaf will now be a staple for my household this month. If you have a good recipe for a healthy pumpkin pie that is also gluten free and dairy free, drop the link 🫶🏼 please.
This bread looks absolutely delicious. I love this time of year. Since moving to Denmark I do miss the canned pumpkin because it isn't available here but I am sure I can cook a small size pumpkin and use that. Have a great day and thank you again for your amazing recipes.

I cooked a Hokkaido pumpkin and it gave me just what I needed and I also grated some fresh nutmeg. It just felt good to eat something so healthy and nice for this time of year. Thanks again.
I made this with all kinds of substitutions as I ran out of ingredients. 1 cup of whole wheat flour, a little buttermilk because I didn't have a full cup of pumpkin puree, I thought I had coconut sugar but I only had 2 tbsp of it, so used brown sugar instead, finally used chocolate chunks because I didn't feel like chopping nuts. It just came out of the oven, looks grainy, but I hope it will taste lovely 😃😃
@@FromScratchFast I wasn't very thrilled with the looks of it right after it came out of the oven. I tried it a couple of hours after it cooled down, it's actually quite good. Doesn't have that dense texture from whole wheat flour. I am quite happy with the outcome considering the substitutions :)

Yes, the bread freezes beautifully. I often cut it into slices and layer them between parchment so that I can defrost a slice at a time. I heat the slices in my toaster oven. I hope you enjoy!
Hi there! Unfortunately coconut flour won't work in this recipe, as it's much more absorptive than almond flour. Are you able to eat other nut flours, or is it just almonds?
@@FromScratchFast I can't have almonds or peanuts due to a sensitivity but I'm on the Paleo diet so all allowed on that (pecan, walnut etc). I haven't seen those in a flour though

I have high triglycerides can't have added sugar, how can I substitute or can I leave out the sugar?
