Brazilian here, just wanted to say that for the brigadeiros usually you use baking chocolate instead of cocoa powder. Also you put butter in. Other than that, it’s good!

you can also eat the first dessert (brigadeiro) hot with a spoon when right after it's done, that's how most of us eat it in Brazil (which is where brigadeiro is from). we usually just eat those in the videos in birthday parties cause it's a very common treat along with cake!

If you don't want to measure in grams the first one, just add:
1 can of condensed milk
3 soup spoons of cocoa powder
1 soup spoon of butter
Then you mix everything till you pull the candy and see the bottom of the pan, let it cool for some minutes, and eat with a spoon or turn them into balls.

Film Geek 227 I never thought about this but standard chocolate is dairy free since it comes straight from the cocoa bean and then is processed. Milk chocolate is not dairy free and I'm pretty sure dark chocolate isn't either, idk about white chocolate

For the oreo cheesecake...a safer option for gelatin is water. Cold water. Let it bloom and get solid. Then add it to the warm mixture. First off, gelatin doesn't always work with other liquids. Second, adding warm liquids to it can kill its properties and you're left with nothing. They didn't even bloom it so idk how the whole mixture managed to Stay together.
With this much effort put into these desserts, I might as well bake at this point.
