Hi Lois, when frying, I suggest using oils that have a high smoke point. That means oils that don't burn when using high heat. Olive oil is not one of those oils.

Do you like corn bread or flour batter better
I prefer using flour over cornmeal. It provides a lighter crispy coating that enhances the fish integrity. However, if I were to use cornmeal it would be blended with flour then sifted.
How do you fry salmon
If you are talking about salmon croquettes, yes I make pretty tasty ones. However, I have never pan fried salmon in the way I would fry catfish. That might just be an interesting experiment though🤔
