Grateful for this celebration of lentils, and he’s the man for the job. Years ago a Turkish colleague made me the most simple standby dish. Lentil salad with Italian parsley, tomato, garlic, a bit of salt, lots of lemon juice and olive oil. A year later, on my first day in Turkey for a teaching job, I was dropped off to my apartment. My Turkish amounted to five words that first day. Nobody awaited me at the apartment, and there was nothing in my fridge. I left and tried to orient myself. Five blocks later I found a small market. I bought the ingredients from my former colleague’s lentil salad recipe and had the most nourishing first meal in Turkey, made by myself! Thank you, humble and tasty lentils!
I was born in India and lived and traveled the world. Lentils have been my cradle food, and comfort food to this day. But I had no idea that Canada is such a huge producer. Bravo Michael. Super tour de force of the lentil trail.

I made what started out to be a basic chicken soup, holy trinity with rosemary and thyme, instead of adding rice or noodles I added lentils and pureed the soup then added a little cream, simple and delicious.. After watching Michael Smith's travels around the world for best lentil recipes I'm excited to try many more lentil dishes with exotic spices.
