Low Carb Pizza Crust with Lupin Flour
3/4 cup (96g) Vital Wheat Gluten
1/2 cup (42g) Lupin Flour (7 tablespoon)
Just under 1/3cup (19g) Oat Fiber (6.12 tablespoon )
2 tablespoon powdered sweetener ( I used powdered erythritol and monk fruit mixture)
3/4 teaspoon Salt
1/4 teaspoon Xanthan Gum
1/2 cup (100g) warm water
1/2 tablespoon Instant or Quick Rise Yeast SAF
1/2 teaspoon Honey
1 tablespoon (15g) soft Butter
1 egg room temperature (lightly beaten)

Add your dry ingredients in a bowl: vital wheat gluten, oat fiber, lupin flour, salt, xanthan gum, and powdered sweetener. Whisk, all your dry ingredients until well mixed. Set aside.
In a bowl add your water, yeast, and honey. With the paddle attachment, mix until well incorporated. Add softened butter and lightly beaten room temperature egg to yeast mixture. Whisk, now add the entire bowl of your dry ingredients. Still using the paddle attachment, mix until dough forms. Switch from the paddle attachment to the dough hook and on medium speed, knead for 7 minutes.
Make your dough in a ball and place back in the mixing bowl, cover with plastic wrap, place in microwave with a 4 cup measuring cup full of boiling water from the kettle.
Close the microwave door and let the dough rise. After about 40 minutes remove from the microwave ( the dough does not rise a lot), split your dough in half to make two thin-crust or leave it whole for a regular crust.
I cut parchment paper to fit the bottom of my pizza pan, laid the parchment paper on the counter placed my dough on it and then used one of my silicone mats and placed on top of the dough. Using a rolling pin roll out your dough and the cut out parchment paper will be your guide to make the dough round.
Once you have the dough rolled out you can add anything you want to make your pizza. I added cheese, black olives, pepperoni, mushrooms and peppers.
Preheat oven to 400 F
Place on middle rack of oven and bake for approximately 15 minutes. Keep an eye on it, I found the bottom of my crust was getting very dark so I put the oven on broil and keeping an eye, let the topping and cheese lightly brown up.
Remove from oven and let sit for couple on minutes.
Cut and serve!
Does the crust get crisp? It sounded crispy when you but in the second time. I LOVE a thin crispy pizza.
To clarify, are you counting each of the two pizzas as three pieces? I want to make sure I understand the nutrition facts correctly when you say six servings.

Could I ask your advice?we have made cookies but although nice they seem crumbly do you know of a way to make a firmer biscuit sorry cookie similar to a digestive type biscuit or rich tea or something like that any ideas would be great thank you cheers Tony

Given that the crust didn't rise much, do you think you need to leave it for the 40 min?
I have tried extending the time but it did not make any difference.

Can I change out the oat flour for almond flour?
What temp should the water be? You just said warm?
130 F approx, the water is hot but you can still touch without burning yourself!

@@GayleMcLeod Thank you so much!! I am also trying Domino's Americano copycat recipe (for my low carb son) which uses cold prove and King Arthur keto flour. I'll report back! Also....little tip. Dont use a rolling pin, use your hands. You are pushing out all the lovely air you put in during prove. You really see a difference in the bake

@@GayleMcLeod ...it was absolutely amazing. I used King Arthur Keto flour, and think/hope it would work with Lupin. Basically, make your dough as normal, (I added garlic and onion powder) leave it under a bowl on the counter for an hour then transfer to the fridge airtight (rolled in saran wrap)
for up to two days before stretching out into pizza base. This ferments the dough and it brings out all the flavours. Pre bake at 200c for five mins. Then add toppings and broil for 10. My son said he genuinely would not have known the pizza base I made him was low carb. It was a huge pizza and 10g carbs! If you are not in a hurry for pizza....worth a try! (PS I also made dupe Dominos bbq sauce! No sugar!)

I'm trying to find lupin flour but it's always out of stock at Amazon.
If you cannot find it on amazon, try a low carb store on line they usually have it. If you are in Canada there are many stores to order from. www.thelowcarbgrocery.com/catalog/advanced_search_result.php?keywords=lupin%20flour, this is just one store. If you are in USA, Walmart.com and many more places. I hope this helps. Just type in buy lupin flour in USA etc. Good Luck and stay healthy and safe!
