+Carlos Lander - while the flavor profile will be different, you could use the onion flakes (essentially dried onion found in the spice section of the grocery store) - and use about 2 Tablespoons of that - otherwise, omit the onion all-together and you'll just have ham and cheesy potato bake. (Not really Au Gratin at that point)
Some of you "instructional cooks drive me nuts with the add in the milk slowly o you don't get lumps in your sauce bologna. Folks don't need to be misled into thinking there is some magic when making such simple steps. anyone can just dump all the milk into the roux and stir it in well and NEVER get a single lump. No sense in fear mongering folks just learning to cook!
I imagine a lot of practice. He did that chefy thing holding the potato too, fingertips tucked under, resting the knife blade on his knuckles helps too. I've tried and tried to do that but I can't get it. You could use a mandolin, if you don't have one it's a really good investment for uniform slices, especially if you pick it up at a store with good markdowns.

How in the hell do you slice that thin. That's not normal.
