Easy Puerto Rican Recipes - Arroz con Gandules (Spanish)

  • Welcome to Jeff & Jo's Puerto Rican Kitchen, where we share easy-to-make, authentic Puerto Rican recipes. The holidays are here and we are taking the show on the road. For the next couple of episodes we'll be spending time with our family and they are going to show us how to make some of their favorite dishes. In this video, Jo's grandpa, a long-time restaurant owner, is going to be showing us how to make arroz con gandules, a true holiday staple.

    Ingredients:
    1/2 cup vegetable oil
    1/2 green bell pepper, chopped
    1 medium white onion, chopped
    12 olives
    1 cup turkey ham, cubed
    1 cup sofrito
    8 oz tomato sauce
    1 pkt Sazon Accent, w/o achiote
    24 oz water
    2 cans of gandules (pigeon peas), washed and drained
    5 tsp salt
    2 lbs rice, washed

    The rice was made to perfection I make it the same way the only difference is I use achiote oil and it gives the rice a beautiful color and it gives it
    Such amazing taste too .... I also use a plantain leave to put on the rice while it’s cooking it’s so good ..My mom who passed way 10 yrs ago
    Was such a unbelieved cook.. I follow her love for cooking too , to me there is no other better tasting food then Puerto Rican food ..
    It’s my opinion that we make our food with one a main ingredient LOVE that’s why everything taste so good ...
    You should make more videós with your grandfather he such a good teacher ...

    I,m so jazzed that I found Jeff & Jo's Puerto Rican Kitchen! 😋 I'm a Boriqua & sad to say I never took the interest into learning how to cook Puerto Rican food. I regret it so much for not taking the time to learn when my mother was alive.

    Love it!!! These are the best videos bringing in your family... I get a warm familiar feeling watching these shows. This is how I make my rice except I use the unhealthy ham 😋 and Sazon rather than tomato sauce. I can eat this any hour. I think this might be my favorite video! ❤️

    I’m so happy I found your channel. 😍 The rice looks good. Good tips from your grandfather. I recently made arroz con gandules and I put too much water. But at the end it was ok.

    I have a question...I guess I could "google" it...How many cups does 2 Lbs. of Long Grain Rice equal? I prefer long grain because when I make Medium Grain, it's a hit and miss with mushiness!

    I make my rice and pigeon peas the same way and I use smoked turkey instead of pork. I think that’s what you meant when you said turkey ham. It still gives a great flavor. Thanks for sharing

      Grandpa is the best! 2 lbs is plenty for us but as abuelo said, if your family is really into rice then you may need more.

Looks like you are open to vegetarian options too, check out our pastelon ( ua-cam.com/video/bbl-Vffqmus/v-deo.html) and pasteles de yuca (ua-cam.com/video/sstBFOq6hZ0/v-deo.html) videos where we used Beyond Meat instead of real beef.       Ay! Ese caldero es viejísimo de abuelo. Ahora los calderos que se consiguen son los Imusa. La calidad no es igual pero resuelven.

    making this right now, this minute. only thing i wish you did was give time points when you fade out an in to the next step. how long did you let the Peas stew for before you put in the rice and same for other points in the video. otherwise, its very well appreciated. Looking good so far.

      Thanks so much for the suggestion, we'll think about adding those in the future. As for the timing of stewing the peas, since they are already cooked it doesn't take long. Depending on how hot your stove is, it's probably about 2-3 minutes. Good luck!

      Si! El los ha usado también. Dejalos descongelar en la nevera y despues lo sacas de la nevera como 4 horas.

    This episode was fantastic! Grandpa is a natural and it's so cool to see how cooking and the culture is so deeply engrained in your family! Love IT! This recipe looks absolutely fantastic and I was thrilled to see the red sofrito which I imagine is like the hulks red cousin in flavor! Very interesting insight about the layers of flavor for the fresh cut onion and peppers to be added prior to the sofrito. Learned alot from this episode. Thanks very much!

      Arigna Watersreaser hi there! It’s actually 5 cups of rice. About 2 1/2 cups of rice per pound.

      Hi Lilly! Confirmed! You are adding the sofrito and tomato sauce also so there is more liquid than just the water.

      You are welcome!! Umm I’m not sure. Can you put about 5 cubes in the microwave (defrost mode) and measure 1 cup that way?

    The flavor of this rice is delicious! However, the proportion of rice to water in this recipe did not work for me. I used 5 cups of long grain rice and 24 oz of water as stated in the recipe. After the 30 minutes and the mixing the rice was undercooked. I had to add more water and cover the pot tightly with foil in order for it to cook through. From start to finish this pot of rice cooked for 2 hours! But it was absolutely delicious. I think the type of rice matters and the size of your pot. I will definitely try it again with more water!

      Thanks Bianca. You are correct that the type of rice and pot matters. 2 hours its a really long time but so happy that it finally worked out. The flavor is certainly delicious! I miss my grandpa's rice!!

      Yes, you can definitely halve the recipe; you'll just need to use a smaller pot too, in order to keep the volume-to-surface area ratio similar.

      Of course! We were using jasmine rice in this video. I've used other brands of medium grain rice before and had similar outcomes. If you use a different variety however (e.g., medium grain or long grain rice) you will need to adjust the rice to water ratio, because they tend to cook differently. Enjoy!

      Jeff and Jo's Puerto Rican Kitchen thanks!! I just found your video with Jeff and the 10 myths. There’s a certain taste I’ve tried desperately to find in rice dishes. I’ve tasted only twice that I can remember. My Puerto Rican friend made it when I was young and a lady at work 2+ years ago. I’m hoping the sofrito is it.

      @@jovitalong1844 If it was a type of yellow rice, then definitely likely coming from the sofrito. You can check out our video on sofrito here: ua-cam.com/video/8sHPb6heV-0/v-deo.html. Other potential reasons for a unique taste could be the sazon, which is very common in Puerto Rican rice. (For example, www.goya.com/en/products/seasonings/sazon). Hope that helps!

      Jovita, sorry one correction. Yomarie's grandpa used jasmine rice in this video--we normally use medium grain, which is why I got confused.

    The water to rice portion is not correct. 2 pounds of rice is about 5 2/3 cups. 24 oz is only 3 cups of water. You would need at least 5 1/2 cups of water minimum regardless of rice long or medium.

      I think 2lbs of rice is closer to 4.5 cups but in any case, there is liquid here coming from other sources not just the water.

      Haha, I guess it depends on how hungry people are 🤣🤣 If you are just having rice and beans with a salad, probably not enough. But if you are also serving pasteles and some pernil, probably a good amount--but again, just depends on how hungry you are.
