I'm not Puerto Rican but I'm so making this meal. My coworker make this rice for a potluck at work about 16 yrs ago and I've never forgotten the taste if that rice! It was so good I didn't want any meat
As an African American Male I have no Latino blood in my family(as far as I know), but I lived in a Latino community for years. And the bar up the street served this exact dish every Friday. It was great. Embarrassed as a professional cook that I've never tried to cook this myself. Thanks for making this less intimidating. I remember seeing her on TV. 😋
I watched Daisy all the time back in the day her Vinagre ( made with pineapple skin ) was amazing everything she made always looked sooo delicious she was the first Latina pioneer I followed on PBS.

I so miss Daisy Cooks, I have cooked many of her recipes with yummy results, my family loves the arroz con maiz, pink beans with ham, citrus marinated pork chops, seafood video, she exposed me to onion powder, achota oil, mojo and Adobe. I rewatch her episodes from time to time. Miss you Daisy!

Speaking, as a two Puerto Rican that was raised in Puerto Rico in the capital San Juan and Santurce people don’t want nothing and I can so they buy it fresh and all you have to do is cook them for about 20 minutes with some type of natural chicken bouillon many people like KNORR BUT THESE DAYS WE KNOW THAT’S PURE MSG AND TOO MUCH SALT FOR ANY PUERTO RICAN SO THAT, THOUGH I WAS RAISED ON IT, I DO NOT USE IT. I PREFERRED BUYING AN ORGANIC ONE AT AMAZON.
When I was a kid I use to watch her cooking show. Telling myself one day I will cook her recipes. So glad someone uploaded them in UA-cam! Am not Purican but the food looks so good. Too bad she's not on t.v anymore.
I can smell Grammas kitchen again..thank you Daisy for sharing these recipes with me..I can experience that feeling of love that came thru Grammas cooking and pass it on to my young adult children, Love, your cousin Chrissy
I cook the pernil first and once done I take some of that pernil juice/ fat and cook it with my rice. After eating the pernil- I take all the leftover juice/ fat and store it for future use when cooking rice

Most important is that her dishes come out good,I tried a cuban arroz imperial from a "chef",it was so awful,theexcess mayo and poor instructions made it worthless.

in the final half hour of cooking, that's when you remove the lid and let it cook. that's what get's it crunchy! :)
