As a Southerner (and long time pimento cheese maker) I just wanted to tell you that you did very well! A couple "secret" ingredients that my family usually adds to our pimento cheese is a splash of sweet pickle juice and a pinch of sugar (splash and pinch are culinary terms that resemble the "measure with your heart" method of cooking). It doesn't make the pimento cheese sweet but gives everything great balance. And you're right, a mix like this will benefit from sitting in the fridge overnight. It needs time for the ingredient to meld together and for all the flavors to fully develop. Great video, I am a new subscriber!

TBH, growing up in Michigan and then moving to the Southwest years ago, I don't know that I have EVER had pimento cheese in my entire life. 🤷🧀 But this looks like something I will have to try. Thanks so much for sharing your recipe! 😄👍
On my pimento cheese I add the Neufchatel cream cheese INSTEAD OF REGULAR IT mixes much easier & I add cowboy candy. At Christmas I form into a cheese ball then add 2 small pretzels for reindeer antlers with black Olive eyes & a tiny cherry tomato nose, served with raw vegetables crackers or pretzels on the side. We eat stuff celery sticks too. I also make us fancy grilled cheese on my homemade sourdough bread with this pimento cheese. It is a delicious way to eat this spread. GOD BLESS

I always love your holiday shares. I am in Texas. Pimento cheese is a way of life here...lol! Try charring red bell pepper and use that for the pimento. You can also add a little BBQ sauce for a different version.

I grew up in the 1950’s & 60’s, and the BEST Pimento Cheese Spreads came from the Jewish Deli’s, in & around St. Louis, where I lived. Nowadays, I can’t find decent Pimento Cheese Spread at any of the local grocers, as I’m far from St. Louis, living the simple country life. The grocer version is just YUCK!! I can’t wait to try your recipe, to see if it takes me back to the wonderful handmade Jewish versions of my childhood. Thank you so much!!

The best way to eat pimento cheese is as a grilled cheese sandwich on sourdough!!! OMG!!!! It does need to sit for 24 hours in frig.
