    When bacon grease was “bad for you” I continued to use it, but I hid that fact from everyone. Now that it’s good for you again, I’m out in the open.

    Breakfast means "break fast" since you have been fasting all night, so the first meal you eat each is breakfast! Therefore, the only meal you can not skip is breakfast! Even if you dont eat it until 8:00 p.m., it's still breakfast!

    You are soooo brave to crack each egg into the same bowl. I always crack insto a small bowl then I put into the main bowl. That way if there is any issue with a single egg it does not ruin the whole batch

    We eat “breakfast” for dinner ALL the time. We love breakfast food! We don’t have chickens, but our neighbor does and she shares her bounty. We are blessed ❤🍳🥓

    We sometimes eat eggs and bacon on toast for dinner. I find it odd people think eggs are just for breakfast 😊 I sometimes have porridge for dinner if I can not be bothered cooking. This is mostly if hubby and kids are away as of course they wouldn't be happy with cereal for dinner. Super kind of you to help out the family from church. 🌸🐨🌸

      I wash my egg shells, let dry ,put in small blender and put in compost pile.

      From experience, when you get home, even though you think you have recovered enough to vacuum just for a second or do the dishes......DON'T ! I did it against my doctor's directions, even though I thought I had rested enough for a week, and within a few minutes I was in dire pain! God bless you and may you heal swiftly.

    Great ideas! A lady from church has been bringing LOTS of eggs to share and with 2 of us we just can't use them all. She said to enjoy the surplus now because when the weather heats up to 90 degree days she won't get near as many eggs. This way we can have meals on hand when the eggs run low. THIS is why I watch homesteading videos on YT.

    I have an old fashioned egg beater that would make fast work of a bowl of eggs. 2 beaters that are turned with a hand crank.
    Been cooking with bacon grease since I started cooking @ 12 years old back in 1970. Never once strained it. The "bits" add character & texture! 😊

      I also am able to make gravy with the bits mixed in the bacon grease. The bits make all the difference in the gravy.

      Edward, I was about 8 when you were born. As a young child, I remember standing on "my box" to use the "Beater"! At 72 I still love to cook. I still have the old Beater too! Thank you for the Memories!

    I make a casserole. In a 9X12 place. Put canned drained green chili's (I canned anaheim peppers) put jack cheese on chili's, cover with beaten dozen eggs place grated cheese in cheddar on top. Bake at 350 about 45 minutes. Tastes like chili rellenos but easier.

    I dice my bacon up before I cook it on medium with a lid. I stir it a few times during cooking. It saves me a lot of time.

    I was in the hospital and had an abundance of eggs. I finally got someone to take them. I usually have 1.5 doz chicken eggs and 1 doz duck eggs. I'm so glad to see this. I can now make these for my daughter and I. ❤

      I just watched a video from them. They pickled a bunch and made egg salad. Another channel I have started watching with a Farm Family of former Old Order Mennonites in NE Iowa (Homesteading with the Zimmermans) made a ton of egg noodles. There is so much one can do with eggs. Awesome your helping that church family.

    Sarah, I too use a splatter screen to fry bacon etc. However, I noticed it still splattered some. So now, I place a paper towel on TOP of the screen while cooking & that helps stop any excess splattering. Hope this helps. GOD Bless you both. I so enjoy y'all taking us around your homestead while you go about your daily jobs & telling us about them! Excited to watch the raised gardens grow!! ❤😊

    I used to make those egg muffins years ago for my children and I because of our busy schedules, but then stopped. Seeing your video this morning, I paused it when you were making those beautiful egg meals and made nine muffins with some left over bacon for quick and easy access on my carnivore diet. I used three eggs in each muffin. In fact they are baking as I type; it's 6:05 am ! I eat one meal a day so I will probably eat one or maybe two egg muffins with a steak at noon. Thanks again for quick and easy meal prep ideas. Great show; love your ideas and how to's.

    I love baking my bacon in the oven. Line a cookie sheet with foil, lay out bacon strips, cook on 400 until done. My bacon is thick so it takes about 25 minutes. I sometimes flip halfway through to get them cooked evenly. You can throw the sausage in too and it’ll all be done about the same time.

      I enjoy baking the bacon in the oven too! My only difference is I use parchment paper. Aluminum foil leaches the metal that interrupts our thyroid. Not saying parchment is perfect, either, i prefer to not use foil in that way. But again, bacon in the oven is super easy and less stovetop mess 😅

    I wrap my burritos in parchment paper. I find they heat up better and you could heat them in microwave or oven.. I lay out the strips of parchment paper, tortilla on top then add ingredients and roll.

    I have made the omelets in jumbo muffin tins, because I add small diced potatoes, to make a fried hash with the sausage and veggies. They take about 45 minutes to bake and 1 is a meal. So quick and satisfying. If you like more hash, count on 1 1/2 eggs per cup. If you like more egg, use 2 eggs per cup. I also put the cheese on the hash, then the egg over the top.

    We just made 30 each breakfast burritos, and corissant sandwiches. And 44 single serving quish with ham cheese and bacon. Freezer wrapped to heat in microwave. Donated 10 of each to the homeless, handed them out, didnt give to homeless shelter, because tgere are so many not close enough to shelters to go for neals. Most were vets

    Sara, you motivated me to get an immersion blender. I haven't used it a lot but I love how it scrambles eggs and whips cream so FAST! Our church feeds the homeless in a near city, 3 days a week. Some of my extra eggs get boiled and given out to be eaten on the days the soup kitchen is closed. We are told that true religion, blessed by God, is to feed the hungry take and care of the orphans and widows.

      I never thought I needed an immersion blender but got one to make soap. It makes soap making a breeze. Have found it comes in handy for other things too.

    Two points from me. #1, For those who don't have/want a dedicated bacon grease pot, I do the same thing with a wire strainer, coffee filter and mason jar. #2, I know you no longer eat bread but lately I've really been enjoying the quick breakfast sandwiches I make using Kevin's English muffin tutorial, and pretty much what you did here w/ the burritos. (sometimes I fry the eggs, sometimes scrambled, I rotate through pork patties, links and bacon and a slice of cheese) I keep these in the freezer, thaw one overnight and reheat in the toaster oven. So quick in the morning and delicious.

    When our son was in cross country running in high school (he's a senior at university now) I often made the burrito wraps similar to yours for the team when there was a Meet or camp or summer run (field trip). We had one young lady who could not have dairy, so we also made a different batch specifically for her. Yes, these are wonderful for kids (and adults).

    Thank you. I want to make up some of these meals to freeze, and try them out on the family. Even if only one or two people like them, it would be worth making and freezing these. Microwaveable freezer meals are always welcome, and if they are homemade, where we control the ingredients, so much the better!

    You can put wet paper towels under your cutting board and it wont slide around. Great thing to do for other people. more people need to do this.

    I’m from Mississippi and bacon fat plays a big part in my cooking….if gives great flavor. I call it, “Southern Magic”. I call it that because so many mistakenly think that pig fat is detrimental to their health and freak out if they know they’re eating it. I had a cook out and one of my guests was raving about my potato salad. I told her that I always used Southern Magic in my potato salad. I got a call from her one day …she was in the grocery store, searching for the fabled Southern Magic. I asked her where she was and she told me she was in the spice section. I laughed and directed her to the meat counter. She was shocked!

    My favorite way to cut up bacon is with scissors. I cut straight across the entire end of a whole package of raw slices about every 1/2 inch. Cutting is fast and lots of bacon can be fried at once in a large frying pan and then mixed into scrambled eggs or other dishes. .

    All those shells will be great for the new compost too❤ blending them first will sharpen your blender and stretch them out when spreading in the compost ❤everything looks great ❤

      How do you wash all those egg shells? Do we have to do that to the shells before composting?

      I crush mine,( after peeling hard boiled eggs)and give them back to my hens , extra calcium! As well as compost, amending soil around certain plants. Added crushed shells to dishsoap makes a great abrasive scrub for really nasty or stuck greasy items.🙂👍

    Thank you thank you for this video! I have 37 chickens and I get average 18 to 24 eggs a day even in the winter it never went below 12 a day. I sell them and it pays for their food. I still have tons of eggs left over. I’ve freeze dried eggs about 19 dz for 4 loads in my dryers. Your video has made it possible for me to not freeze dry more eggs.     I love cooking bacon in the oven. Easy. Line cookie sheets with parchment paper. Turn oven on to 400. Bake for 20 minutes. I usually do 2 pans and rotate them halfway through. So easy and cleanup is nothing. I save the grease and throw away the paper. Cookie sheet stays clean! No spatters! Love your meal ideas! Now I’m ready to make all those easy and yummy recipes.

    If you cut a tin can in half across it not down it and then remove the end you can make rings out of them. Then you can use those rings to form sausage patties, cut biscuits, and cook eggs inside them so that they are all the same size. Then you can make them into sausage, egg, and cheese biscuits that you can freeze and have for grab, heat, and go breakfast in to morning. The other thing we used to do is make a whole loaf of bread into french toast. Cut wax paper into squares to separate them, stack them up, and slip them back in the bread bag and freeze them. Then you have ready made french toast for grab and go as well. Pop a couple off with a table knife, pop them in the toaster, and go.

    Years ago, I used a small drip coffee pot for bacon grease. The basket that was made for the coffee grounds acted as the strainer. It was great.

    I was watching this video as I was making my own breakfast Burritos. I lay them out on a cookie sheet and put them in the freezer. Then I place all the burritos in a single ziplock bag. We air fry them to give them a slightly crunchy outside. No need to individually wrap or waste plastic wrap.

    Suggestion. If your egg and sausage patty become freezer burned before putting on the lid put a layer of plastic scrap on top to seal out as much air as possible. You probably eat fast enough it’s not an issue.and thank you for showing more of how you eat on you diet.

    i use a coffee filter in a stainless widemouth canning funnel for straining lard, some jars in the fridge, others pressure canned for longterm

    Great way to use up extra eggs and have no waste. I don't eat any pork, but lots of different veggies can be used with eggs and frozen like onions and peppers and mushrooms and right now asperigus!

    I bake my eggs. I use 24 eggs add a little milk, salt and a couple handfuls of cheese put into a huge baking dish @350 and stir every 10 minutes until done (30 minutes total) makes the fluffiest eggs and the cheese is already in the eggs. The kids will love these

    What a wonderful video. I buy pasture raised eggs. I can use these recipes since my husband and I have a 20 by 40 and a 20 by 20 garden. It takes time to keep the gardens going, but we LOVE it. ❤

    A tip for "frying" alot of bacon at once, ...put parchment paper on a large cookie sheet and place a layer of bacon on it and bake it at 400° F to 410° F for 20 to 25 minutes depending on how Crispy or "not so crispy" you like it. Of course ovens vary so keep a close watch on your first batch, till you perfect your bacon 🥓😋🥓👍🏻🤗😁

      How do You keep your oven clean from all that popping grease all over the inside? That's why I don't cook it in because I imagine that I'll be down on my knees in the future getting all that grease off of the oven so it doesn't catch on fire.

    When we crack tons we put the shells directly into lined pans and cook them to turn to power for the gardens and chickens. Try salsa in egg and sausage roll ups. Cream cheese and Old English cheese on English Muffins too.

    An easier and less messy way to cook bacon is in a sauce pot. Put a tablespoon of or two of bacon fat in the bottom of the pot. Cut bacon in half as you already do. Layer all the bacon into the pot randomly. Turn on heat to medium and stir the bacon with tongs, turning as you do. The fat on bottom will melt and keep the first bacon from sticking. The bacon will heat up, render water, then fat then as like magic the bacon will all crisp up into perfectly cooked bacon cooked in its own fat. Amazingly this method almost eliminates all splatter and the bacon all comes out the same. The cooking time is about the same as the frying pan method but much more enjoyable. And it is much easier to pour the bacon fat back into your bacon fat container.😊

      @@jholcomb9532 no, leave it off. You will need to stir and turn the bacon every one or two minutes. At first the pound of bacon will seem like a lot to move around the pot, but after a few minutes it’s as easy as stirring a pot of stew. Once the water has all steamed out the temperature of fat in the pot will rise and brown and crisp the bacon nicely.

    I put eggshells in pan and bake on 200 til crisp. They will crush really easy. Put around plants because cut worms and snails don't like crawling on the sharp egg shells. Of course, the soil loves the calcium they contain. Chickens love them also for stronger egg shells.

    I am a senior citizen and recently started getting Meals on Wheels delivered to me for lunch. It is a well balanced meal and I count it as my main meal. I have eggs every night for a dinner. Yes it is boring sometimes but I have become creative with the meals. I still water glass almost a dozen a day because my girls are all at full speed. 🥰

    If you substitute the cackle berries, for some rice, throw in some garlic and maybe celery to the sausage and onions, you will have a good jambalaya. If y'all eat rice.

    Fantastic use of eggs and perfect timing! I myself have a massive amount of eggs which we share with our children and their families, all our neighbors and my husband's co workers but still have eggs coming in daily and they add up fast.
