INGREDIENTS:
For the Lobster
6 lobster tails
1 cup flour
2 tablespoons cornstarch
2 teaspoons hot paprika
2 teaspoons garlic powder
2 teaspoons black pepper
2 teaspoons onion powder
1 tablespoon kosher salt
¾ cup buttermilk
1 egg
2-3 dashes hot sauce
Vegetable oil, for frying
For the Ranch
¼ cup buttermilk
¼ cup sour cream
¼ cup mayonnaise
2 garlic cloves
1 tablespoon chopped dill
1 tablespoon chopped chives
1 tablespoon chopped parsley
Kosher salt and black pepper, to taste
Box Mac n' Cheese
COOKING METHOD:
1. Remove the lobster from their shells using kitchen scissors, then cut the tails into quarters.
2. In a medium mixing bowl, whisk together buttermilk, egg, and hot sauce.
3. In a large mixing bowl, add flour, cornstarch, spices and salt. Whisk together well to combine.
4. In a large, heavy-bottomed pot over medium heat, add 1 ½ inches of vegetable oil and bring to 350°F.
5. Dip each lobster nugget into the wet mixture, then into the dry mixture. Shake off any excess, then add to the oil. Add 6-8 lobster nuggets and fry until golden brown, then remove with a spider and transfer to a paper towel lined sheet tray.

there’s a great dish from the bahamas called “cracked lobster”. its deep-fried lobster with a puffy batter coating (in my experience). really incredible.

Hey Matty! Water doesn't necessarily boil faster or slower up here, it boils at a lower temperature. I'm up in Boulder Colorado, and our water boils at around 95-96 degrees Celsius... that's why it's so hard to fucking cook pasta and rice up here at elevation..... we can sure as fuck get really high though 😶🌫️

I tried the Smoky Mac and its really different from the other mac and cheese products out there. The pasta is better quality and the sauce mix is more flavourful. I'm glad to have a better option when I want a boxed mac.
