But the burgers crust in like 1-2 minutes and end up being under cooked on the inside with a decent crust (i flip after 2 minutes cuz it is already super seared)...
Never use high heat. That’s the reason your inside is undercooked. Start lower, and as soon as you add your meat to the pan, Medium high heat. About a 7/10 heat on a traditional electric stove.
Get a cast iron burger press. 90 seconds on each side with high heat. Smash the burger down and stack them when finished. It's a more even cook and it tastes way better.
I like this. Towards the end I get a spoon and ladle melted butter or more beef tallow over the tops of the burger. Just like the steak technique. Nice video.

Look up cowboy Kent Rollins cast iron guide on UA-cam. Basically run steaming sink water on it. Scrape with wooden spatula. Never use metal. Ever. Stick on burner till it’s dry. Add tiny bit on oil coat the whole surface even handle and place in warm oven or back on burner.
Wipe excess fat and oil out of the pan, or dump into something, let harden, and trash it. Dump a little cold water in the hot pan to loosen stuck on stuff. Scrape with wooden spoon. Rinse out. Wipe dry. Heat a little bit.

tbh as long as you're eating a balanced diet tallow is absolutely fine. The modern diet has way more sugar and salt which is the main cause of problems. If you're eating enough veggies in proportion to your meat, and not over indulging on sweet desserts or soft drinks, then go for as fatty meat as you want, you'll be fine.
I mean giving the middle finger to vegans is doing you no favors. If you’re unhealthy and do exactly what you say often, it’s gonna be bad for your health. But hey, go off on the vegans. Anyways, I rarely eat burgers but it’s still important to exercise because they stuff can get unhealthy.

I made burgers tonight like this and ive never felt so much abdominal pain in my life. I feel so sick. I have no diet restrictions of any kind. Apparently its supposed to be the grease from the meat thats causing this. Idk if i can eat ground beef by itself again. Pan fried mine in butter
That’s the meat working to heal your gut and digestive tract. Meat heals the gut lining and anything on the gut walls will get pulled off and pushed out in waste. If you’re having abdominal issues that is a very good thing the meat is healing your gut. Once it’s done healing the gut you will be able to eat meat without that effect. Do not listen to anything drs or western medicine says. Eating meat heals and creates zero inflammation in the body.

Well she doesn't have any culinary training. First off you don't need to add any tallow or oil when cooking burgers as they have more than enough fat in them as it is. Secondly you never squish or press a burger patty because you just squish all the fat out of the meat then you end up with a dry burger. Third thing she is cooking at too low of a temperature because it should only take 8 minutes for a burger.
Don't "squish them." It squeezes out the juice and desirable fats. Never squish. Incidentally, the same is true of pancakes. Sorry, just saying. Never squish anything you are cooking. It compacts the food, squeezes out air that makes food fluffy and dries it out.
Flip them away from you, use oil at the start, not butter (tiny bit of oil, burgers cook in their own juices) and don't squish them, they'll lose their juices.

Instead of squishing, use your thumb to lightly indent the middle of the patties right after putting them in.
I used this technique the other day and it worked out good for me 🙏🏽 appreciate it. Never even thought about the fresh hot spots lol

Medium. Say full heat is 10. Cook at 5. Maybe 7 one minute each side at start

@@zar3045 tallow is ideal, but you can use an oil. I would recommend olive or avocado, no toxic vegetable seed oils 👌🏼
