couple questions, why the concern over the temperature with meat you ground yourself? and you didnt mention the grill temp but why no sear for the maillard reaction?
@SlapperGlutesTwice hi... I could have cooked these to a medium, but I just like cooking ground products to a fully cooked temp... for me it's a food safety thing and rather be safe than sorry..... I didn't bother grilling them since this was my first time trying burgers in my new smoker so I just wanted to try them as they were ... I will experiment with that in the future for sure.... as for the temp, sorry I should have mentioned that.. smoker was running at like 225-230 F....

This is the way my father has done it for ages he also smokes some sweet onions to go on the burger it's beautiful! great video !
