HOW TO MAKE PASTRAMI AT HOME USING BRISKET

  • welcome back everyone,,, I hope you like Pastrami because today I show you from start to finish how to make a Pastrami yourself at home using the Brisket ,,,,, I love pastrami but don't cook it enough since it does take a certain amount of time to do this but don't be scared most of the work happens while the brisket is sitting in the brine all week..... this isn't hard to do and anyone can do this for themselves at home.... I just love that flavor of a Pastrami and it just is so good..... you have to make this yourself at home... i can't wait to make this again....
    BRINE - (this is for 1 liter of brine)
    70g Curing Salt ( with Sodium Nitrite)
    Coriander - 6 g
    Black Pepper - 10g
    mustard seed - 12g
    red chili flakes - 2g
    all spice - 5g
    cloves - 2g
    ground ginger - 3g
    ground mace - 3g
    cinnamon - 1g
    white pepper - 3g
    garlic - 4g
    bay leaves - 2
    bourbon - 1.5oz
    RUB - Coriander, Black pepper, Mustard, red chili flakes

      @nikkihanmer852 thank you so much... this I have to say was my best to date... I love doing this..... the knife I have is probably 20 years old 6" boning knife ..I love using it.. German steel .. . I got an infection, not sure how and had to get antibiotics for it.. it got worse as the day went on . I'm happy I didn't have to film more till the next weekend lol....it's all good now ..

      lol.. so do it... this was my best batch yet,,, I have it dialed in now and can't wait to make more.... I will be trying some new things with the pastrami brine in some upcoming vids... thanks for watching :)

    Hey Andre! What do you do with the excess trim? What happened to your eye? Anger the wrong person?

      @tamfur hi.. the trim I break down into just fat and then lean trim... the fat I save and freeze and when I get enough I make Tallow... the lean trim I either save and freeze for making sausages or just grind it for making burgers.... my eye,lol... I got an infection...not sure how.... I ended up going to urgent care Sunday morning and needed antibiotics to get rid of it...
