    Ingredients:
    Cauliflower 400 gms
    Salt ½ tsp
    Turmeric powder ½ tsp
    Oil 2 tbsp
    Garlic chopped 1 tbsp
    Green chilli 3 pcs
    Onions slice 2 pcs
    Tomato chopped 2 pcs
    Red chilli powder 1 tsp
    Turmeric powder ¼ tsp
    Coriander powder 1 tbsp
    Water as required
    Cauliflower blanched
    Coriander chopped 1 tbsp
    Method:
    Blanch the Cauliflower: Begin by cutting the cauliflower into medium-sized florets. Bring a pot of water to a boil and add salt and turmeric powder. Once the water is boiling, add the cauliflower florets and blanch them for a few minutes until they are slightly tender but still firm. Drain the florets and set them aside.
    Heat Oil: In a large pan, heat oil over medium heat. Once the oil is hot, add chopped garlic and sauté until it turns light golden brown, releasing its aroma.
    Add Green Chilies: Add slit green chilies to the pan and sauté them for a minute. This will infuse the oil with a spicy flavour.
    Sauté Onions: Next, add sliced onions to the pan and sauté them until they turn soft and translucent. Stir occasionally to ensure even cooking.
    Cook Tomatoes: Add chopped tomatoes to the onions and sauté them until they soften and break down into a sauce-like consistency. This will create the base of the curry.
    Add Spices: Once the tomatoes have cooked down, add red chilli powder, turmeric powder, and coriander powder to the pan. Stir the spices into the onion-tomato mixture, cooking them for a couple of minutes to enhance their flavour.
    Add Blanched Cauliflower: Now, add the blanched cauliflower florets to the pan. Stir well so the florets are evenly coated with the onion-tomato mixture and spices.
    Add Water: Pour in water as needed to adjust the consistency of the curry. You can add less water for a dry curry or more for a gravy-like consistency. Stir everything together.
    Cook the Curry: Cover the pan with a lid and let the cauliflower curry simmer on low heat. Allow the cauliflower to cook through and absorb the flavours of the spices. Stir occasionally to prevent sticking and ensure even cooking.
    Adjust Seasoning: After a few minutes, check the curry for seasoning and adjust salt if necessary. Let it simmer for a few more minutes until the cauliflower is tender and the curry reaches the desired consistency.
    Garnish with Coriander: Once the curry is cooked and ready, garnish it with freshly chopped coriander leaves. This will add a burst of freshness and colour to the dish.
    Serve: Serve the cauliflower curry hot with chapati, paratha, or rice. The rich flavour of the spices combined with the tender cauliflower makes this curry a delicious and comforting meal.
