    Great video! I learned the baking powder trick last year and it really works. I use a WSM with lump coal and wood chunks and sometimes will smoke day before, then finish of on Weber gas grill next day right before serving to get them crisp. I did ruin about 5 pounds of wings for the Superbowl by not keeping it simple and tried a well known rub in a gallon ziplock without measuring, and it was so salty I had to throw it all away. Next time came out great, but lesson learned is to measure the coating, as in your video, instead of hoping for the best. Seems a simple thing but getting the coating on is critical and will try in bowl and with your ratio of seasoning. Cheers!

      @@ImpossiblyKosher Hi Ben! Search for the Holy Grail of chicken wings is over! Your rub is the best, I've been killing wings with ready made rubs which were all salt. I was able to salt and put in fridge overnight, next day get a good coat and smoke using WSM with fire dial and vortex. Ran it hot around 300 F for an hour, finished with 5 and 5 minutes, flipped, on Weber Spirit gas grill to really crisp up the skin. Slight deviation on temp, but they came out super crispy and moist on the inside. Used cherry and hickory wood chunks. Thanks again!

    Another great video. I’ll try this on my Orion and then direct grill on my gas grill. I won’t forget the Baking Powder😂
