I ran into him in Vegas, eating brunch at Mon Ami Gabi. We passed each other, as he and his young male guest were walking through to be seated.
I have just watched the documentary the "Last Magnificent".
I made a point to stop at his table walking back to mine and thanked him for his inspiration as a chef and told him that when I drink champagne I think of him... He was so gracious and charming.

It is called ...finding a local farm. Not hard at all to find fresh local healthy products if you just take the time to look.

@@tanyad.2180 I live the most Urban area in the 🇺🇸.
Yet, less an hour away there are local farms for which to source everything from eggs, any and all types fresh raised organic meat & poultry, plus fresh produce, preserves, honey, milk, and cheese. Not to mention beer & wine.
They may not be found in the all the same location but taking a minute to search for yourself on this wonderful new tool called the internet sure does help. Good luck to you.

In the last recipe for "casserole roasted chicken" I can't find the temp and duration for the oven. I am guessing 375⁰ for 45min then uncovered for 15min?, but is there someone from production that has these details? Thanks a bunch

Ah America! The land of plenty. So a whole chicken was roasted to highlight the breast meat. I'll wait until the thighs and legs are served.
