I miss Julia Child as well, she made me feel so good as a child to watch, wholesome and nononsense. I would love to see that deep dish pizza that was displayed being plated at the beginning of the taping please. This is a wonderful recipe as usual, that I will be giving a go at on the weekend.

I learned in a bakery to make apricot spread by simmering apricot preserves with water and then straining them, very easy.

The guest pastry chef was before her time. She improvised a rough puff and a creme patissiere in a way that removes all the bluster and pomp and gets right down to business.
I still use instant read thermometers and make huge productions about these things but admire the simple audacity of microwaving your farm-fresh berries for 18 minutes in Julia Child's MF kitchen.

Most Minnesota bakeries that I remember did not use puff pastry, but just a sweetened rich bread dough. I prefer that.

Just 7 of the 28 videos are visible, that is unfortunate.

Watching this makes my teeth hurt! Similar-looking French pastries are usually less excruciatingly sweet than Danish pastries. Ironically, in Denmark these are known as Wienerbrod (Vienna bread), if I'm not mistaken.

You can also add a little more sugar if you want instant diabetes. 😆

There are many French pastries made with little or no sugar. And there are fillings you could make without sugar.
