Watching these shows on a Sunday afternoon were the highlight of my childhood. Kids today won’t understand how important these people were.

Jacques trying to discourage Julia from putting liver in the stuffing was cute. He likes to eat the liver, it’s the chef’s treat.

Try a Turkey roulade or just the turkey breast roasted in the oven. I live in a one bedroom apartment and I still made a feast for my friends.

TURKEY CARVING
Chopping legs off at 3:25
Carving turkey spine 4:55
5:25 removing wish bone
6:45 prepping legs
Add thyme and bay leaf, carrot and onion to stock
COOKING TURKEY
Set oven to 335 degrees
Remove tinfoil from legs an hour into cooking
Ready to cook when leg senues are easily removed

Chopping off the ankle end of the drumstick (6:18) then roasting the leg, and then easily pulling out the tough tendons (18:09) is freaking genius! Surprised this tip hasn’t caught on. Online methods usually involve dealing with raw turkey and pliers-No, thanks! Jacques’ method doesn’t chunk and wreck the meat, looks nicer, and makes the drumsticks easy to eat or even carve. So many great tips, techniques, and simple recipes in this one show! Mahalo nui loa, Jacques and Julia!

I’ve made turkey every conceivable way, and her method (removing the leg/thigh and cooking them separately) is my favorite. I also remove the wings and use them for stock.

I am not even interested in cooking that much but I love these shows, very watchable. I just feel sorry for that turkey.
