DAY IN MY LIFE VLOG | Productive Sunday | Healthy Meal Prep, Juicing & Dinner | Cashew Creme Recipe

  • Come along with me for a day in my life with a productive Sunday vlog. Today we’re doing grocery shopping at Trader Joe’s, unpacking and getting organized for the week, and meal prepping. Jimmy and I meal prepped celery juice, frozen bananas for smoothies, and grilled chicken for easy healthy lunches. We also cooked a fun fancy dinner with a beet carpaccio, mint, and grapefruit salad, dairy-free cashew creme fraiche, and gluten-free, soy-free teriyaki chicken with bok choy and soba noodles (made with peanut-free cashew butter sauce!).     ♡ RECIPES
    CASHEW CREME RECIPE:
    -Cashews (1.5-2 cups)
    -Water (3/4-1 c water)
    -Onion powder (1/2 tsp)
    -Truffle salt (1/2 tsp)
    -Lime (2 tbsp)
    Instructions: soak the cashews in the water and lime for 2+ hours to soften, then use an immersion blender or high speed blender to blend until creamy. Add lime and spices to taste.
    To turn it into a cashew butter stir fry sauce, add coconut aminos (~2-3 tbsp) and (~1 tbsp) rice vinegar.
    BEET CARPACCIO + GRAPEFRUIT SALAD:
    -1 large golden beet
    -1 grapefruit (peeled and cut into cubes - save the juice!)
    -Cashew creme fraiche (recipe above)
    -Handful of fresh mint, chopped
    Instructions: Preheat oven to 375°. Clean the beet, then lightly coat it in avocado oil and wrap in foil on a baking sheet. Bake for ~1 hour until you can pierce with a fork. Let the beets cool, then peel. Slice into thin circles. Add cashew creme fraiche to plate, then add beet slices. Top with grapefruit cubes & juice, then sprinkle mint. Add salt/pepper to taste.

    How many pounds of chicken do you prep on Sunday?

      We usually do 1-2 packages of 2 large chicken breasts! I’d say 1.5-3lbs. And then a package of ground chicken
