    Absolutely love your videos! But one thing I noticed is that you say to season to taste on uncooked meat. "Seasoning to taste" means seasoning and then tasting, and then adding more seasoning or stopping if it tastes right to you. This obviously shouldn't be done with raw meat. It should only be used when whatever you are cooking at a stage where it's safe to eat, and is usually done at the ends of the cooking process as the final step to get the seasoning just right.

      Thanks for noticing, unfortunately it was mistake on my end... had not noticed. Will pay close attention in the future as raw meat should DEFINITLY "NOT" be tasted. I can see where the confusion and misunderstanding could happen. I usually say " to your liking." Thanks again!

    I live in New Mexico and have grown up on Tamales. I have always had to purchase them from local vendors or from a restaraunt that is 25 miles away. This recipe has improved my life from good to great! Thank you so much!!

    I saw a short where someone pointed out that the macros for a tamale are better than for a protein bar and I was like... I should make them with chicken thighs, but I am too lazy to wrap them individually. This is brilliant! 🎉

    I appreciate the recipe of masa that seems a healthier version of the lard masa
    I bring it up to my family that I would like to try and make healthier versions of Mexican foods and sometimes I do but I get blank faces as like a disaprovement, it hurts my feelings. I get healthier recipes and I make my food with love, even though it feels like I'm shunned for it

    I want to make the tamale pie in the 9×16 dish. Is their any Instructions that are significantly different from your recipe that uses beef vs. my idea of using pork?     I’m a huge fan of Rosanna’s cooking, and I use her steak quesadilla rub when I’m grilling steaks and chops, it works really well! I thought I’d share it with other fans. I’ve used ratios so you can make as much or as little as you need:-
    1 part chilli powder
    1 part sweet paprika
    1 part ground garlic
    1 part ground onion
    0.5 part ground cumin
    1.5 part fine salt
    Black pepper to taste. Enjoy!

    I say season to taste means seasoning means to season where you the chef determines what a right season is for those you are cooking for! 😄 I am so excited!!! I love tamales!!!

      I use it because it is neutral in flavor, and a heart healthy option. Having said that, you can use vegetable, corn oil or lard.

    I would love it, if you could make a taco salad. I go to a place up here, called Salsa Burrito. They have a taco bowl they make. I always add chicken tinga with it, yellow rice, and guac, and I love the Habanero Vinaigrette. The lady uses real Habanero's for the Vinaigrette.

    Girl, that looks sooo good! But I know you spent about 15 hours on all that over 3 days or so. lol. I'm trying to do a tamale casserole, something like this, but not as time-consuming. I'm checking out a lot of videos and recipes, and I'll put something together (I'm usually pretty good at that, but we'll see. : ) I'll come back and let you know if I am able to do it!     I’m letting it cook now. So nervous. It took so much work and I only used a tiny fraction of the corn husks. How long do leftover corn husks keep?

    sigh-for the first time i hosed up something bad lol. Meat was awesome, etc. but my tamale was... to thick or i cooked too long or something. it was thick and hard. will try again in the future after Christmas

      I was also thinking that it looked too thick and 3 layers would be too much. Her husband reaction wasn't very convincing. It would probably be better with just the bottom and top layer and rolling it out a little thinner.
      Was the meat seasoned good with the peppers? The meat taste is most important

    I don't believe you need them leaves to make it a casserole. The bottom is not gonna burn cooking it in the oven

    In my opinion, there's absolutely no reason to sear the meat here. I don't think it makes a difference whatsoever.

      ​@@chrismclaughlin9722Correct. Browning is a change at the chemical level. This is known as the Malliard reaction, a word most of us have probably heard but might not know entirely. Basically once you're cooking above a certain temp, the flavour compounds in the food literally change and new ones are even formed!
      It's an incredible reaction that i hope everyone interested in cooking can read about, as it absolutely helped me improve so much and the people i cook for were pleased!
