Steph you need to check out pearl girl, she is an oriental girl that finds these same looking big fresh water mussels/oysters in streams, rivers, ponds, etc & check out how she removes the pearls from a live one, it explains why the pearls are located like they are in the dead ones you have. Also that you may be missing some in the fist shaped middle part as she always cuts that open & finds more!
Darls when you are shucking the oyster , once you have the shucker in the shell you should be able to open it with out total destruction by gently guiding the shucker along the edge of the shell. It will work on 98% of your oysters . I am successful with just a butter knife.
You should probably put the oyster down and then open it, that's how I saw some of the other channel opens their pearls. You have found some amazing pearls!!!

I do worry about you injuring yourself opening the oysters up have you ever thought of using a rag or hand towel for stability and pushing down towards the table to open the mussels and oysters. U should really learn to open them in a proper manner. Every time u open I fear u might hurt your hand.

Honestly. In my opinion only the pearls which are stucked in the flesh are real pearls. The rest are not. I cannot explain here. It's difficult.

Real pearls are not perfectly round and same size it is rare to find a perfect round real pearl the bright coloured round pearls looked farmed.
Koo you are correct , real pearls are not perfectly round and white or light cream...colored another story.
