The slow blink means they actually "love" you in their way. My cat will do that when she's relaxed in my lap, and I blink back at her. Cats actually understand when you blink back, so telling them "I love you too" will strengten your bonds.
Showing their belly says they are very relaxed and comfortable with their surroundings. Also slow blinking (also called lovey-eyes) can show affection.

The other 40 she's demanding love, as in biting to call my attention, jumping on top of my desk or cuddle on top of my chest when I'm laying down and mewing... She wasn't this demanding but for a year or so she has been incrementing her demands of adoration, I blame my sister's ginger who has tough her she can get more food/pets that way... >∆>

If it has a "chunk" missing from its ear like it's been clipped, it might be a feral cat that has been trapped, neutered and then released back into the environment. It's called the TNR (trap, neuter, return) program to help manage feral populations. Vets clip their ears so people can tell which ones have already been fixed. We adopted a female feral cat and she has the tip of her left ear missing. Just be aware that not all feral cats are good candidates for adoption, though. Congrats on your new friend. :-)

Or your cat has just had enough and you're not reading its body language well enough to know when she wants you to stop. Cats can get overstimulated easily, and their fur is also really staticy. Sometimes they've had all the pets they want, sometimes there's just too much electricity in their fur for them to handle.

I thought that my cat was angry at me and turned away as though saying "I'm not talking with you anymore!" but someone told me he turned his back because he was actually scared!! my cats sit facing the other way sometimes. I always just assumed they are either looking at something or just got comfortable that way. One time my cat stared straight into the wall for like 20 minutes. THey hunt so it could be that they see something small.
Cats' belly is their most vulnerable part, so getting them to show it to you and allowing you to touch their bellies is a big step. If your cat is bitting you strongly, it means is trying to trust you, but you're moving too fast. If the bites are playful and don't really hurt you, it means your cat just wants to play. If at any point you can touch their belly, and the cat just relax, it means they fully trust you.

I’m very not good at reading cats... I love cats but I don’t know how to read them and they always bite me. I find dog easier to read than cats
