I am Peruvian and we usually use just the leaves of the cilantro also some people add spinach to make it more green. Also, we don't use broth, we just use water. As a veggies, we add carrots, corn, sweet peas at the end of the cooking we add some green or red pepper that you can cut them very thin.

That is so cool you are half peruvian! I absolutely love peruvian food! I love all the veggies in the dishes! I love making this green rice. I cook it with drumsticks in my rice cooker. It was fun to see another version of this.

Tried this today with basmati rice. Came out well! I used a mix of cilantro, mint and dill for the green gravy. Used the authentic peruvian as suggested. Very similar to pulao we make in India. Thank you!

Aji paste...I grow the Aji Amarillo peppers every summer. Do you have a recipe for preserving them into the Aji paste?
Ohhhh, yum!! Yes, the best way is to either freeze them or deseed cook until soft, then peel, then purée and then freeze the purée.
