  • Making great pork ribs using a dry rub. Removing the membrane. Oven baked and finished on the grill.
    The drippings make great beans.

I seasoned the ribs 2 hours before cooking using this method , cooked at 325 for 2 hours in the oven, then put ribs on the bbq for 5-6 minutes to dry the ribs out, worked out perfectly

A seven minute recipe with no actual cooking instructions… No temperature, no time in the oven included.

If you don't want to grill you can put in broiler to dry out as well

Love the dry ribs & Texas beef brisket from Famous Dave's in Md. Maybe I'll try to make my own now that you've shown me how.

Heath Riles uses the mustard binder + rub method for his competition ribs, but Malcolm Reed's fav recipe is no binder, just dry rub. Try both.

I make ribs like 4x a week. (Kids love them). I usually remove the silver skin, add a decent amount of salt and pepper. Place in a deep pan with a rack, cover with tin foil, bake at 275 for 3 hours, then sauce and broil uncovered for 3 minutes. Turns out amazing.
Today I am trying first dry rub, I removed silver skin, coated in dry rub, put on rack for 30 mins, then covered and put in for 3 hours. Can't wait to see how it is. Can't decide whether I should add sauce and broil for 3 mins at the end. Maybe half a rack I will, other half won't.

I want to try your way and I had the same question. So how did it turn out? Was it better broiled with sauce or not?

@kazeet456 I make it like this everytime now, 275 for 3 and a half hours covered. Then 3 minutes broil on high after sauce.

@kazeet456 if you want a little more of a "crust" on the ribs with the sauce place in oven at 350 for 30 minutes WITHOUT tin foil, then take out, set to 275 and cover with tin foil and cook 3- 3 and a half hours.
Then bbq sauce and broil 3 mins.
It'll just make the outside have a crustier texture.

Try using a butter knife and start from the center of the rack when removing the membrane

Never saw mustard used on ribs before. I might have to try it out. My grandma used to apply mustard on sand bass (white bass) filets.. You almost forgetting to put mustard on it made me realize that I forgot to put any kind of oil on my ribs when I applied my dry rub about an hour ago. 😑
