I have seen this dish on my Canadian Thanksgiving table but I have honestly never tried it because it did not look to my taste but your homemade recipe looks incredible and honestly your excitement has sold me. Thinking about making ahead, I can probably make the cream sauce, the breadcrumbs and the fried shallots the day before and then assemble (shallots on at service time) and bake the next day? Thinking about prep space on Christmas Day. Whenever we go south to America my husband always buys Funions, he really loves them.

what were those you used to fry the shallots? Super long chop sticks or tweezers? they were offset too.
Long offset tweezers! They are so great for frying and I find the offset makes them very comfortable. Cooking chopsticks would be great as well
