How has it held up? judging from reviews on Amazon it's pretty soft steel (easy for the manufacturer to put a razor edge on out of the box) but for someone needing a chef knife and wanting to spend as little as possible, maybe a good choice at $10. A Mercer M23510 is real deal X50 Cr Mo V15 with an edge that lasts, in head to head testing, as long as a Wustof in VG10 and only costs $40, certainly a better choice than this clearly BS product at $25 🙂
Guess the deal is off... knife is $25 now. :) The box in the video says 'Santoku Knife' at the bottom, but that is not their Santoku style/model. Regardless, looks like a good knife/deal was had. Note: Rockwell is a hardness scale, usually expressed with a number after it (like Rockwell 58-60). The higher the number the harder the steel, and usually the better the edge retention. But, the harder the steel, the harder it is to resharpen as well, so there's a balance that get's struck there. The hardness is due to many factors including the type of steel the blade is made from, the method with which it was forged, etc.
I have this same knife, and if it isn't damascus, it is at the very least sanmai because you can literally see the layers on the spine of the blade. My guess is that the outer steel is damacus while the core isn't.
It's also not VG10 but the Chinese "equivalent" steel 10Cr15CoMoV. You cannot get a true VG10 Japanese steel knife for $10.00!

That's cause it's not a Damascus blade, just mono steel that's been laser etched. Incidentally all knives are sharp straight out of the box.
