  • Kentucky Caviar
    2 (15.8 oz) cans black-eyed peas, drained
    2 (11 oz) cans white shoe-peg corn, drained
    2 (28 oz) cans Rotelle Tomatoes with Chilis, drained
    1 large green pepper, diced small
    1 large red pepper, diced small
    1 jar banana peppers, chopped slightly
    1/2 cup green onions, sliced
    16 oz bottle Zesty Italian Dressing
    In a large bowl, gently stir together the first seven ingredients. Pour dressing over vegetables and gently stir to coat evenly. Refrigerate and allow to marinate overnight. Serve with tortilla chips for dipping.

    I always add fresh Cilantro, Basil, and Parsley(chopped). Lime or Lemon juice gives it a little zing, too! Love y’all❣️

    Delicious and so versatile. I have added cilantro, red onions, diced green chilies, parsley, jalepenos, garlic, sliced black olives, and different kinds of beans and tomatoes, you cant screw this up!

      As I said, this recipe is so VERSATILE. That means you can tweak it without totally overhauling it. All the suggestions I mentioned work very well with the original ingredients. I look at it as enhancing the recipe by putting my spin on it. I don't think of that as changing or re-writing the recipe, just making a great recipe a little better, in my opinion. I don't think of it as a "different" recipe, just tweaked a bit. I think a cook should be able to make adjustments without being accused of "making a different recipe." I used to be rigid as you seem to be, but I've mellowed and loosened up a bit in my old age. 😊

      Red onion is a needed addition, and cilantro. I agree with your variation suggestions.

    I make a similar one with black beans , shoe peg corn, Roma tomatoes, purple onions, green onions, red, orange, green & yellow bell peppers, 1-or more jalapeño peppers depending on how hot you want it….I usually just stick with one for ourselves, balsamic vinegar and freshly chopped cilantro. It’s a lot of chopping of veggies as you want them chopped fine….but it’s worth it. I will try yours too. I love this kind of stuff

    I did the math & it comes out to 68 calories per 1/2 cup. The chips are the killers for dieting!!
    I could eat this all day!
    Each serving of tortilla chips is "usually" 140 calories. I could eat this all day & STILL lose weight!!

      Another channel suggested, using have baby bell peppers as your chips and they can be used like scoops chips.

    Love that there is no salt or sugar in this recipe. So healthy and the fact that it lasts so long in the fridge is awesome

      The dressing has both but you could make your own. Just drizzle your favorite oil and vinegar and herbs / spices.

      The canned vegetables already contain salt. The dressing contains salt. No other is needed.

      Unless you get no salt added veggies or substitute fresh/frozen ones there's a lot of salt in every ingredient. Check the sodium on canned vegetables before eating. You'll be surprised just how much they add to those things.

    I’m not a fan of black eyed peas but I love it in this recipe. A coworker would bring it in and his wife called it Cowboy Caviar. Their recipe had cilantro in it but everything else was the same. Your cooking videos are so calming. Thank you again!

      I live in Texas and we will add jalapeno peppers with cilantro. Black eyed peas is southern thing. Interesting history of black eyed peas in the south. Good recipe!

    Definitely going to try this recipe for this summers cookouts. I'll separate it into thirds before adding the Rotel tomatoes, and make 1 dish for each rotel - mild, original and hot. That way everyone gets their preference. I love the fact it can be made ahead of time.

    I think I had this at an office potluck once, but they added chunks of avacado also. It was super good, but I didn't know what it was called, so I have never been able to remember what else was in it, but this is definitely it! Thank you I am going to make this tomorrow! I can almost smell it and taste it right now! I'm so excited! My family will love it. Thank you!

    I will try this! Please try my recipe for Cowboy Caviar! I think you will love it! I use only dried beans. I soak them in water to cover, overnight. Then simmer till tender. Or, if you forget to soak them overnight, simmer dried beans for two minutes and turn off heat. Cover, and let sit for 2 hours. Simmer till tender. And I only use frozen corn, as canned corn tastes soggy. Also, I now toss with the dressing right before serving, if I make the night before. Otherwise, the oil gets congealed and thick.
    If you ask me, the trick to the best possible cowboy caviar is to dice the ingredients that need dicing (the tomatoes, onion, pepper, etc - not the beans!) very small, the smaller the better. Try to keep your tomato and avocado pieces petite rather than big and chunky (about bean-sized works great!).
    3 Roma tomatoes , seeds removed, diced
    2 ripe avocados diced
    1 15 oz can black beans , rinsed and drained
    1 15 oz can black eyed peas , rinsed and drained
    1 ½ cups frozen sweet corn , thawed (I just usually toss it in the salad frozen unless I plan on eating it immediately, it thaws quite quickly).
    1 bell pepper , diced (I used half a green and half a red, but color doesn’t matter)
    ⅓ cup red onion , diced
    1 jalapeno pepper , seeds removed, diced into very small pieces
    ⅓ cup Cilantro , finely chopped
    DRESSING
    ⅓ cup olive oil
    2 Tablespoons red wine vinegar
    2 Tablespoons lime juice (fresh preferred)
    1 teaspoon sugar
    ½ teaspoon salt
    ½ teaspoon pepper
    1/4 tsp garlic powder
    Tortilla chips , for serving
    Combine tomatoes, avocado, onion, black beans, black eyed peas, corn, pepper, jalapeno pepper, and cilantro in a large bowl. Toss/stir well so that ingredients are well-combined.
    In a separate bowl, whisk together olive oil, lime juice, red wine vinegar, sugar, salt, pepper, and garlic powder.
    Pour dressing over other ingredients and stir/toss very well.
    Keep refrigerated. If not serving immediately, be sure to toss/stir well before serving.

    I like making my home made taco sauce. I live here in eastern Kentucky. I went to morehead Kroger and got a rotel chilis and tomatoes, two cans no salt tomato sauce, I put the can of rotel in the blender, then add one teaspoon minced garlic, tea spoon of cilantro, one table spoon date sugar or what ever you want if you want to use for sweetness, table spoon of lemon juice or lime or cirtron juice, one table spoon of smoky Mexican hot sauce, blend until smooth. Put in a pot for the sauce add two cans of the no salt tomato sauce, add a tea spoon of cumin, tea spoon of onion powder and for a kick I like to add a tea spoon of cayenne pepper. Then stir on stove cap till mixed cook fifteen minutes on low to medium heat. The rest can be put in a jar in the fridge or plastic bowl to be frozen for later use. Goes great on tacos, and chicken in mole sauce on whole grain tortillas. If you want it extra smoky or robust adding a table spoon instead of the teaspoon of cumin could do that. Change it up to suit your taste. If you can take salt you may want to add a pinch or so of that. So this can be a hit or miss thing depends on personal preference, I like it a bit spicy.

    I actually make this with fresh tomatoes, black beans, cilantro and lemon juice. Because it gives off so much liquid, we use it as a dressing for romaine or chopped salad! It really is wonderful. Never knew it was called, “Kentucky caviar” as I’m from Hawaii! What a sweet couple you are. Nice channel! Thank you!

    I'm saving this because it's so healthy! I'm on a whole food plant based diet, no oil, to improve my health. This diet keeps my systemic lupus and diabetes in total remission. I'll use fat-free zesty Italian dressing. LOVE IT!

    I use drained and rinsed black beans, bag of thawed corn, diced cucumber, purple onion, yellow, red and green pepper, cilantro, a lot of cumin, garlic powder, lime juice. Minced jalapeños can be added if you like it spicy. Add salt to taste and chill. Yummy! We call it COWBOY CAVIAR.

    I subscribed Immediately. I have cooked Professionally for over 20 years. Though when my Mother introduced this recipe to me around 2015 (We knew it as Texas Caviar, Rest In Peace Mom!) I was skeptical about it At First, but it is an Amazing Recipe. What I really like about it is that you can use your imagination and add a lot of different ingredients to make Many different variations. I would use black eyed peas but also other types of beans on occasion like black beans and white beans. Also I really liked to add in Fresh Herbs like Cilantro and Oregano maybe some Thyme. Also Garlic real Garlic either Raw and or Roasted. Oh and for myself I might take some aside and add some thinly sliced Habanero. Just so many possibilities. It Is a Great Recipe!!! It was definitely a Crowd Pleaser.

      I would use chickpeas, I really don't like blackeyed peas. Black beans would be pretty in it but they bleed when they sit very long in a dip or salsa. I first heard of this is as Texas Caviar.

      @@jcboom6894 I absolutely did versions with chickpeas and enjoyed it more. I think one version I did was chickpeas and I want to say Cannellini beans and put a twist on it. I added some mild yellow Curry seasoning, and this was a smaller batch just for Me. I added roasted elephant garlic and some deseeded thinly sliced Habanero chilli peppers (Not too much, They are Spicy) . And I probably added a lot more fresh Herbs like Cilantro, Thyme, and Mexican Oregano than I normally would if I was making it for a bunch of different people with different taste buds... Hahahahahahahaha 😂!!!

    Yup, in Minnesota we call it Cowboy Caviar, but instead of bla keyed peas.we use black beans. I was in France staying with my friends.
    I made this on a whim for a cocktail party. Did not make it hot, and left out the peppers. My Lord this was a HIT WITH THE French People. In Fact they moved the bowl and chips so more people could get to it! 😅😅😅😅😅😅 it was empty by the end of the night,
    I had to leave this easy recipe and have the hostess Email it out the next day. Simply the funniest thing. Good food is good food!
    PS. Needed two bags of chips.

      I never met my grandfather. He passed away in 1939 and I was born in 1954. I beginning to think , if he was still around, I might have to kick him in the hindermost. I've come to realize I've missed out on southern hospitality and really good food! We Yankees have some "growing" to do. (wink)

    The Tostitos Cantina style are thin and crispy. They are my favorite. I make a similar recipe but I don’t drain the rotel, I don’t add banana peppers and I add canned tomatoes. My recipe was called Texas Caviar even though I’m in Tennessee.

    I found this funny! It’s called Texas Caviar! We make the same with 3 cans black eye peas and 1 can regular corn, 2 rotel, I green chilies, 1 fresh jalapeno, 1 poblano pepper, 1 red onion! And the same on remaining veggies and dressing! But no banana peppers! Strange how it changes from state to state!

    Gonna try this 4 sure... I ck'd my local Walmart and they don't have the tomatoes w green chilies in the 28 oz cans so I'm gonna get the 28oz cans of petite diced tomatoes and get a 7oz can of green chilies which should bee a sufficient replacement. It'll bee a whole lot cheaper than purchasing the 6 cans of Rotel. Thanks 4 all the GR8 recipes and thanks 4 all y'all do 4 the kingdom of GOD. If I never meet ya here on planet earth... I'll c ya on the flip side 💞 4 sure.

    I use less tomatoes 🍅& 1 can drained blackeyed peas & 1 can drained black beans & 1 can chopped black olives 🫒
    When we serve it , we have a bowl of sour cream & a bowl of shredded cheddar cheese , I like the scoop chips because the ingredients won't
    Fall off. Everything else is the same
    In our Hillbilly, Red neck, caviar

    TEXAS caviar! We added some chopped black olives, cilantro, olive oil, and the juice of 1 lime, rather than the dressing (but I believe that Zesty Italian is good on pretty much everything!)!

    Gonna try it. Reminds me of a black bean n corn salsa w lime that after 3 days or so it’s gets almost a gel consistency for the liquid. Delicious and can sneak in some veggies. Gonna give this one a go. Thanks for posting.

    Other than the peas, It looks like it would be great in an omelet with ham or sausage...or maybe as an enchilada filling with meat.

    He's right about the black-eyed peas. I don't like them. To me, they taste like dirt. But when you use them in these caviar recipes, they absorb the flavors in the mixture. I make a Texas caviar that's very similar, and I love the stuff.

    Used to have very similar version when I lived in Ohio, now I make it in Washington state . Sometimes I toss in some cut up Polish sausage and call that dinner . It's filling but not heavy .
