Should You Bleed Your Fish ? Shocking Results !

  • My entire life, I have never bled a fish before cleaning them. I personally never saw the need to do so as I think fish taste great as they are, so why add an extra step ?
    I know fellow anglers who swear by bleeding fish so I decided to give it a try to see what all the fuss is about.
    In today's video I test the theory if bleeding a fish makes it easier to clean and if it makes the fish taste better. I took two similar fish ( species and size ) caught out of the same water, prepared them the same exact way with the only difference one was bled out and the other wasn't, and I compare them side by side with shocking results !

    I love what you said to your son, " you have to honor it by eating it." It's important to teach what it means to take a life to feed your family !
    I have never bled my fish before, but now I can't wait to do the same comparison !

      Sometimes if I get a nasty fillet I'll freeze in a baggie with the breading on and use it as chum on my next trip, baitfish love breadcrumbs too!!

    Great experiment and honest side by side comparison.
    As a kid in Wisconsin, we caught lots of lake fish during summer vacations up north. I don’t remember intentionally bleeding the panfish but we usually kept them alive all the way to the cleaning shack and killed them by first cutting off their heads. So we were unintentionally bleeding them that way. We didn’t bother filleted little bluegills and perch, they were scaled, gutted and fried whole breaded in flour. Great eating and we caught lots of them.
    After highschool I moved to Hawaii and caught my first saltwater fish there. Everyone said to bleed the fish as soon as it’s landed because the meat is cleaner and tastes less fishy that way. So I made it a rule of my own as well.
    I later met a guy at work who owned a fishing boat and we went fishing for Mahi Mahi, Tuna, and Marlin every weekend.
    He had a commercial fishing license that allowed him to sell fish to the auction block in Honolulu. I asked him what the deal was with always bleeding the fish we caught? He explained that it was a regulation, the auction block won’t accept a fish that isn’t bled out. And it’s not something you can do after the fish is dead, or it won’t work. So the system is, land the fish, knock it unconscious with a bat and immediately cut the gills while the heart is still beating. The heart pumps the blood out along with the adrenaline that also spoils the flavor of the meat. The deck and fish hold full of ice was always a bloody mess, but like a good deck hand, I hosed down the deck with our saltwater wash down hose. (Fish blood is super slippery) On the way back in from 20 miles out to sea, my next job was gilling and gutting the fish. The auction block won’t accept fish that have gills or guts either. No knife can cut the gill plates out of hundred plus pound tuna so we used branch loppers. Threw the guts overboard and washed out the cavity with ocean water, then filled the cavity with ice. (We carried 600 pounds of ice in our fish hold)
    The head has to be on the body of the fish so that the inspector can see the clarity of the eyes and judge time of death. They won’t take day-old fish, it has to have been caught the same day. (Lots of rules to sell fish commercially) Another rule is, with the highest price fish being tuna, the core temperature of the tuna has to be 45 degrees Fahrenheit or lower, or they’ll call the fish, “burnt” and won’t accept it. The only way to get a couple hundred pound tuna’s temperature that low was to add bags of rock salt to our ice. That brought our ice box from a warm 32 degrees to around 18 degrees. Which sounds strange to people who use salt to melt ice on streets and sidewalks in the winter. Well scientifically, salt doesn’t “melt” ice, it lowers the freezing temperature of water. So the ice is no longer ice on the street because that salty water can’t freeze.
    Anyway, we brined our fish box whenever we caught huge tuna, bled all our fish, got the core temp down to well below 45 and made lots of money at the auction block. Our most expensive single fish was a 270 pound yellowfin tuna. They gave us $1200 dollars for it.
    Then turned around and auctioned it off for probably $5000 dollars.
    So since then, just fishing recreationally now in Washington State, I always at least bleed my fish.
    Glad you discovered for yourself what a difference that little step makes in the fish’s meat quality.

      @@MAD_Outdoor_Adventures, Yeah man, I lived and fished for 35 years in Hawaii and it was great fun. I learned the importance and respect for fishing in Hawaii as a way of life and how it feeds the people there. Hawaii people live on fishing and not much else. So they’re good at it.
      My favorite times were the slow days out fishing when we didn’t have enough fish to bother selling to the auction block. That meant the pressure is off, we’re going to give our fish away to family, neighbors, and friends. Make a party of it.
      Fishermen are always the most popular people in the neighborhood and when they saw our fishing boat coming back in the middle of the day, they knew they were getting free fish. They already had food to trade for fish. Barbecues and smokers were being fired up in anticipation of the evening to come as me and my buddy cleaned the fish. Neighbors would come by with food offerings like Portuguese bean soup and Spam musubi, sushi, and silly questions like, “How’d you guys do today?” (They knew how we did) “Well, maybe a hundred pounds of Mahi and Ono. That’s for you guys. Thanks for the food, we’re kinda tired of fish.”
      Coolers full of beer would come rolling up to the house, guitars in hand, pretty soon the yard is filled with neighbors and friends. Kids running around screaming, dogs playing, people singing and drinking and eating until the wee hours of the night.
      Those were my most memorable times in Hawaii. The feeling of family and community and aloha was the best thing over there.
      Honesty, respect and love are what makes Hawaii paradise.
      I recently moved to Washington State and work on tug boats and barges. (Can’t leave the ocean I guess), but I miss Hawaii.
      Too expensive there and too hot all the time, and ironically, I work with four guys on our crew from Hawaii. They moved to Washington for the same reason. Hawaii was great in the 80’s but it’s too expensive now. Lots of people from Hawaii all over the Pacific Northwest.
      We still go fishing though, can’t take that away from us, and live and party in Washington spreading our aloha best we can.

      Belive it or not,i discovered this by myself,as a 12 years old kid,when i was catching smaller freshwater fish.
      My dad,was a math teacher,didn t have time to process the fish(it was alot everytime),so i was cutting their heads first,to clean them better ,and to save space in the fridge.
      My dad and brother were upset alot of times that i wouldn t eat fish caught by them,because they were always coming home with the fish dead.
      After 27 years ,i still only eat fish caught by me or by my brother and father,but stunned and bled by me.
      If a 12 year old boy can see the HUGE difference,i wonder how can so many people still argue on UA-cam if this is really necessary.
      I always tell them to try it and se for themselves.
      The only downside is that they will only accept fish processed like this in the future,just like i did.

    If you don't bleed your fish, it might have a little bit more of a "fishy" taste to it. However, the blood also helps the meat getting a little more juicy.
    If you bleed the fish, there's a less "fishy" taste, but it also tends to make the meat a little more dry.
    For instance, if you plan on making a fish dish for dinner, with sauces and delicate flavours. It is much better to use a bled fish as the protein source.
    However, If you're just going to put your fish on the grill or in the skillet, and use minimal seasoning, an un-bled fish is better because the blood adds a more natural flavour to the fish. So it really isn't a matter of what's better or worse, just different means of processing, and both works in different fields of cooking.

    Thanks for sharing this experience! It's very interesting to me as I grew up outside of the US and never ate freshwater fish that I caught. All saltwater fish I caught and ate hasn't been bled. When reading and watching about dispatching trout, people kept talking about bleeding the fish.
    Seeing the difference during the cleaning process is very interesting, I'm definitely going to try to taste the difference with stock trout!

    I first noticed during ice fishing season. The jumbo yellow perch that had the hook ripped out and their gils torn and they bled had much whiter filets. After a little research I found it’s a common practice with trout fishing guides. So now my larger fish such as bass or walleye I always cut and bleed them. Great video

      I was legit shocked when I took a bite of the fish that I bled out and it was so much better tasting lol. I always thought it was non sense so I wanted to test it with two fish of the same species, caught out of the same lake and same size and I am now a believer that it actually works.     What a GREAT video folks. Thanks much. My dad and I used to catch bluefish like crazy and he bled them the moment they came out of the water. We caught so many fish we had an assembly line at the dock to filet them and then at home to wash, bread and pan fry them. And then into the freezer. I don’t like gamey fish but as a kid I always like fish night and it was often bled bluefish. I mean it was good and lots of people don’t like bluefish!😊

      @@MAD_Outdoor_Adventures if you have a smaller boat like mine bring one of those insulated grocery bags with some ice inside a garbage bag liner. I've put 8 to 10 pounders and it stays out of the way without taking floorspace like a regular cooler......just change the linerbag daily
      Even just an hour at 74 to 80 degrees in a bucket decreases meat quality , let alone 2 hours in summer heat dragged in warm surface water beaten down by the sun.
      I have a rectangular mop bucket in the back of the boat, I will rip,a gill and put it in the bucket with some water.....after bleeding 3 to 5 minutes I then bonk if still moving and straight into the ice slurry bag.....that way the boy and I can grind for up to 4 hours or more with the fish in perfect shape
      My target species is kokanee(landlocked sockeye) and with the cost of sockeye these days it makes sense to try to preserve our meat in its best quality.....I've even made sashimi because of how I treat my fish.....just leave in cold freezer for 2 weeks before thaw to kill parasites
      If you know anyone of Jewish faith my method complies with their orthodox strictures as well...animals including fish must be bled live
      When I worked in a government inspected slaughterhouse the hogs are actually shocked unconscious and bled while the heart is still pumping....scientific studies have proven it increases quality and tenderness, VERY IMPORTANT that you do not unduly stress animals before dispatching. Tests we did inhouse proved that adrenaline release makes the meat both watery and tougher in the hams etc, we changed how they were brought from the barns with lower light, less cane and prod usage and more gates and moving easily with just a hose..
      Same principle with a game animal...proper shot placement and a quick to instant kill greatly increases quality. A poorly shot animal that runs and stresses for hours before death will be pumped full of adrenalin and hormones and the quality will suffer A LOT.

    I pretty much knew the answer to this before I watched but I had to watch your reaction anyway…😂 My grandpa told me about this when I was little. He use to nail catfish to a board and cut all the fins off and it would be bleeding out it’s tail the most. I asked him why he did that and he said it tastes better this way. He said you’ve gotta bleed them out. Then he would skin the fish and then fillet it and if there was any red meat he would cut it out. So that’s also the difference in good catfish and bad… lol You know what i mean… lol

      The red line running down the center of the fillet is called the bloodline and that's where all the muddy/fishiness comes from. Also if you soak your fish in cold milk for 15-30 minutes before you fry it up, total game changer. I soak any fish aside from panfish in ice cold milk now. I don't eat bass because of bad experiences as a kid and eating warm water bass. Since moving north everyone says that bass is better in the winter. I think I'll have to try the cold milk on a bass and see if it changes how I feel about eating them

    Agree 100% with your findings. I can speak for Stripers that there is much less of a bloody mess when filleting them and the taste is so much better when you bleed them.
    As a fellow fisherman sharing the love and knowledge of fishing, use a hand pruners to snip up from the bottom to cut the same area you are using a knife. So much easier to cut and bleed them out, especially with bigger fish.

      I keep saying this but I was legitimately shocked lol I thought it was just a fad that everyone was jumping on to be one of " the cool kids " lol. But after I tried it I will bleed them every time I can ! Makes less of a mess and tastes so much better !
      Thanks for the tip ! I have been using the Ugly Stik Marine Shears to bleed them out and it has worked perfectly same concept of hand pruners.

      Totally agree. Striper fisherman here from California. Bleeding any fish out gets rid of the fishy taste. Taste much much better

      I'm also a striper fisherman in eastern Canada and yes, the difference is significant, both in cleaning and in taste. After whacking them on the head, I slash the gills and leave them on a stringer in the water to bleed out. The blood will coagulate otherwise. It's surprising how much blood they have.

    Thank you for doing the experiment and being honest with the results. I have bled catfish for years, cut out the yellow fat and the red line on the outside of the fillet and it is the best tasting fish there is. Bleeding works on all fish to be used for the table.

    The difference is even more noticeable if you cook it any other way than fried. Also, it's more noticeable once you freeze the fish and then thaw it a couple weeks later and cook it. Looks like you're eating them fresh and it's hard to go wrong with fresh fish.

    Thanks for your honest opinion. Next time try the difference between bled and non bled and gutted and cleaned immediately after catching. You’ll need 4 fish for a proper comparison. When gutting and cleaning ensure that you get the blood line off the underside of the upper internal gut cavity (along the spine, you can use a toothbrush to remove it all) and also remove the gills. I’m not going to sway your judgment by giving you my opinion but I hope you try it. Thanks for sharing this video.

      When I first heard about it I thought it was bogus, I thought somehow it caught on and everyone was doing it to be in the " Cool Kids Club " sorta speak. So I put it to the test with two fish of the same species, of the same length, caught out of the same lake and I was shocked that there was actually a difference. I have been bleeding mine ever since and I recommend everyone to do so now as well. Thanks for watching and good luck on your adventures !

    Man, I'm 68 and have never bled a fish. I have seen it done on videos of certain fish caught in salt water, but never fresh water fish. I live in Georgia, and to me the best tasting fish that can be caught in my area is Crappie followed my Channel Cat. It's hard to imagine Crappie tasting better than they already do....but I'm going to try it!...Good video and thanks for the info.

    I come from Australia and we bleed all our fish, my stepdaughter refuses to eat fish unless I catch it because I always bleed mine, I have even pumped Saltwater thru the spine to flush blood out of tuna and make them taste even better. Great video showing the difference between the 2 fish

    I use ice slurry to do the same thing. When a live fish get cold all the blood goes into the core, around the backbone. It dies in that state and there is very little blood when cleaning.

    I recently learned to clean trout and I bleed them as soon as I catch them. They’re always excellent, even hatchery fish. Two thoughts occurred during this awesome video of a lovely family… one, I wonder if we’re losing significant nutritional value by bleeding them. And two, for some reason it felt like this taste test should be conducted with wine next time 😋

    Great vid, I've been bleeding my fish for years, I call it (gill & gut) !! I throw the gills & guts back in the water as I'm sure the critters will dispose of it. No mess to clean up @ home and I taste the clean flavor of the fish. Plus my fish actually stays fresher as long as I'm out fishing.

    Now there is a review I can trust haha. I think you might have it a little backwards on the walleye thing though. The "worse" the fish the better the bleeding technique helps. Pretty popular with carp i believe. Walleye is so good no matter what I think you would notice it less but it would still work.

    Having worked on a salmon farm we used to bleed the fish to kill them, stun them first so they are unconscious then cut the gills so they bled out while oblivious to their fate, the supermarkets didn’t want blood stained fillets.

    Interesting experiment! I don't really fish that much, I have no car or license and haven't caught anything yet in the river that goes through town either (plus we don't have any sort of bass in my country) but I'll try to bleed them when I catch something next time!

    I fish on Long Island Sound ( salt water body) and bled every keeper fish we catch and put them in a 5 gallon bucket with salt water. We only fill the bucket about 1/3. Some of those fish with splash around even thou they were cut so that’s the reason for 1/3 of water. Leave them in the bucket for about 5 minutes then put them in the cooler with unopened bags of ice. The fillets come out great and very little blood and taste better bled than not.     For people that may not understand this. They bleed out beef and pork, why would this not be common practice? There is a reason for doing it, and I am glad you discovered it. The blood carries a lot of flavor that isn't very good tasting, have a metallic taste, or whatever. Most think that big catfish taste horrible. If they are bled out and the yellow/fatty and red meat is removed, it is as good as any fish you have had.

    I know this video been out a little while, but.... great video. I love fish, large mouth as well, and I grew up eating fish all my life and never bled them, like you. But I think I'm going to start bleeding him, and go a different route. They sure look a lot better and like you said, easier to clean and not as messy.👍👍

    Just found your channel. Well, UA-cam finally suggested a good one. I learned this lesson with trout and salmon a few years back. Haven't found a fish it doesn't help. Think it is that the enzymes in the blood dont have time to spoil the meat.

    It depends how I'm going to eat my fish if I bleed it or not. If I'm going to make it into poke or sashimi, I bleed them. If I'm just going to fry them I don't. Also for when I steam fish, it depends on the size of the fish if I bleed it or not. Bigger fish I bleed whereas smaller fish I don't. Great video mahalo for sharing.

    someone suggested to me once not to rinse fillets before freezing (this was before i learned about bleeding). that was a mistake. bleeding makes rinsing easier as this video shows.

      In a way you can’t really base the comparison on two fish as we all know from experience I think that even two fish in the same school on the same day can come out tasting rather differently. Some fish are just bad for whatever reason. But the conclusion here is still in accordance with some industry procedures and scientific research on the topic.

    I took the live well out of my boat because we always put our keepers in a cooler on ice. A friend from Florida taught me to bleed fish first then put on ice. Now I wish I had a live well so I can slit the throat and put in the live well until they are clean, then put them on ice. Even here in northern Minnesota, the ice keeps the meat fresher.

      I don't have an ice chest on the boat as I do not want to sacrifice the room on the boat for it. It seems to be the "proper way " based on the comments I am getting. I keep them in the livewell until I am ready to go back to the dock and then I bleed them in the livewell. Once I am back at the dock I filet them or I put them in a cooler of ice until I get home to filet them. Thanks for watching and good luck on your adventures !

    Thanks for putting it on test. I'm from Germany and we bleed all our fish. How to handle and kill fish is defined by law, because quick killing is less torture for the animal.
    But the method of putting the filets in salted water is new to me, i just put salt on. I wil test that next time. And the oven with the knobs above the heating plate looks weird, i think i'd burn my hands all the time.

      Bleeding definitely makes a huge difference ! I have always soaked them in salted water, give it a try and see what you think ! The knobs seem to be like that on electric stoves vs gas knobs are usually below, I prefer cooking with gas but you have to use what is available lol.     Ive known this for 50 years iam in australia i only catch salt water fish and yes it works even when you are eating the fish you can notice there is no little black blood vessels and the taste between a fish bought from a fish market and a caught bleed fish is completly diffrent especially taylor even snapper and jew ludrick and drummer is a must

    Catchen King Salmon in the Pacific Ocean you can most definitely tell I'm a firm believer in bleeding out. I live in south Texas now. oversized redfish. They're the best eating as long as you bleed them.

    I started bleeding fish when I started catfishing. It's necessary when catfishing. I bled some smallmouth I caught and they were delicious.

    Sorry but this video just popped up in my feed for UA-cam reasons. I knew the answer before I started the video. I'm 51 and learned this from a friend 30 years ago. I couldn't believe the difference. I showed my grandpa and he was shocked as well. I'm glad I learned it back then.
    As I got older, I also learned how to "zip" the midline/bloodline out and that also helps the flavor. I thought about it, and if there is any merit to mercury or other contaminants in the fish, most of it is probably concentrated in the intestines, blood and bloodline. Healthiest way to eat fish. 👍 If your livewell has a fill and recirculate pump, leave the fish alive until you're ready to leave... Bleed them at the end while recirculating the water through until the water is clear. You will end up with fresher fish! Grandpa would take my brother and I out to Lake Erie once a year for 3 days in summer and this method was used until Pa passed 4 years later.

    Not only bleeding but I use an Ike Jime tool to kill quickly and ream out the spinal cord. It turns off the muscle and stops lactic acid build up. It makes a big difference.

    Oh yeah been bleeding my fish for decades. Started it first with bass and couldn’t believe the difference in taste. And with bass I get rid of the mud line/center part of the filet too- end up with two pieces from each filet that way.

      I have been fishing my entire life, cleaning fish and cooking them since I was old enough to do so without injuring myself and I never have before this video either.     I haven't bleed fresh water fish, but I will try it. I like to soak my fillets in water with salt overnight, in fridge. Next day rinse, and soak one more night, rinse again. Try it.

      It does seem to have originated with saltwater fish and has made it way to freshwater. I have heard of it for years but never thought it could make a difference. I have always soaked my fish in saltwater though as that is how my grandparents did it when I was a kid so that is how I did it. Thanks for watching and good luck on your adventures !

    Wow what a difference in cleaning. I don’t usually bleed them on the boat to keep them alive and fresher. How do you keep them fresh on the boat after bleeding them???

      Huge difference in cleaning as well as taste ! Through the comments it seems to be best to bleed the fish as soon as you catch it and put it on ice immediately. I don't have an ice chest on the boat and don't really want to sacrifice the room on the boat to do so. I personally keep the fish in my livewell until I am ready to come in and at that time I bleed them, then depending on where I am fishing I either clean them as soon as I get back to the dock, or I put them in a cooler on ice drive home and then filet them. Bleeding is definitely worth it in my opinion, give it a try and I am sure you won't be disappointed. Thanks for watching and good luck on your adventures !

    You can actually also bleed a fish you've knocked if you're quick and don't mind helping the blood a little by squeezing with your hand along the fish towards the slit gills. For those who are concerned with the welfare of the fish in its last moments, but still wanna get the blood out.

    Unbled fish has a more gamey taste. By the way, you don't need to cut a fish's throat. Just clip any section of the gill with some scissors. Their heart does the rest.

    You can also use table salt and cold water for any meat, it will draw the blood out. just fellet and drop in bowl and put in fridge and rinse and cook how you like ..I put some ice in bowl also ,just me ..Mad is also right .

    i also think the filets are much whiter on bled fish if you hold fish under water on a stringer and slash their gills the blood comes out better if you do this with a large pike best to have it double clipped to the stringer

    I have bass fished my entire life. My old man was a semi pro bass fisherman. I've fished all over the east coast and a little west. I've never ate a bass lol. Never thought to eat one. 🤔

    I've never had problems with Crappie flavor when i set em in the bottom of the cooler and drop ice on top of em so they chill better, they usually die out within 30-45 minutes from hypothermia.

    With salmon in Alaska I always bled by slicing the gills and hanging them on a stringer.
