- Here's a deliciously moist fruit cake for Christmas that can be made just days before the big day. . This is a quick recipe for boiled fruit cake. Meaning this is a no alcohol no soak Christmas cake. It's a quicker and easier version of the traditional cake without the hassle of pre-soaking the fruits.

Ingredients
For approx 500g mixed dry fruits
70 g dates, chopped (½ cup)
70g candied cherries, chopped (¼ cup + ½ tbsp)
100g (½ cup + 1 ½ tbsp) golden raisins
100g (½ cup + 1 ½ tbsp) black raisins, chopped
100g (½ cup) tutti fruti (candied peel)
60g dried apricots, chopped (10 Nos.)
30g (¼ cup) cashew nuts, chopped
50g (½ cup) almonds, chopped
¾ cup orange juice (from 3-4 oranges)
3 tbsp water
1 tbsp orange zest (zest of 1 small orange)
220g (1 ¾ cup) maida (all-purpose flour)
130g (½ cup + 2 tbsp) sugar
170g (¾ cup + ½ tbsp) salted butter
3 eggs
¾ tsp baking powder
2 tsp rum extract / vanilla extract
Spice Mix:
1 tsp ground cinnamon
1 tsp dried ginger powder/grated ginger
¾ tsp grated nutmeg
8 cloves, finely ground
Caramel Syrup:
½ cup sugar (105g) + 2 tsp water
¼ cup water
Diluted jam (optional):
1 ½ tbsp any fruit jam
2 tsp water
8" round pan
Bake at 160C (325F) for approx. 50 minutes. Followed by at 150 C for approx. 35 minutes.

Maria, cakes have a tendency to develop cracks on top. In fact when the cake cracks, you can be sure it has baked well. Only, for a few types of cakes, it is necessary to have a flat top and then different ingredient proportions and proper temperature control is required.

Sneha, you're most welcome. Yes, you can add the soaked fruit with the liquid in place of the boiled fruit. But according to the quantity of the soaked fruits, you'll have to adjust the weight of the other ingredients. For this cake, the fruits weighed 500g (when dry) and measured 2 and 3/4 cup. (After soaking, I guess they would measure 3 cups. Or a little more.) So if your soaked fruits measure 3 cups, you could use the same quantity of the other ingredients - flour, sugar, butter, etc.

Hi! Thanks for getting in touch. I used dried apricots available here in India (jardaloo) and regular fresh dates / Arabian dates, not the hard and dried kind.

My pleasure to be of help Joseph. You could use my last-minute Christmas cake recipe that involves the use of boiled fruits. But in place of the boiled fruits, you could use your soaked fruits. My recipe calls for 500g of soaked fruits. Drain the liquor away (but save it) and weigh the soaked fruits. If the weight is around 500g (450g to 550g) use the same quantity of other ingredients as in my cake. If the weight is more or less than that, accordingly you'll have to adjust the weight of the other ingredients. If you don't know how to do this, just tell me the weight of your soaked fruits and I'll send you the weights of the other ingredients. Y0u could use a little of the liquor in place of the vanilla or any other flavouring. After baking and cooling the cake, poke holes in the top with a thick skewer or thin knitting needle and pour the liquor through them. Hope this helps.

Thank you Sulbha, for your appreciation. Regarding avoiding rum, my recipe is for a cake without rum. I've only mentioned how the recipe can be adapted to be made with rum. And yes of course, you can bake it in a kadai directly on your gas stove. Sulbha this cake is made without rum. Instead of rum, we're using orange juice. I have only mentioned how the recipe can be adapted to make it a rum cake.

Shireen, I don't know the quantity of fruit you have soaked or how much rum you used to soak them. Usually the soaked fruits are added to the batter along with any liquid/rum that remains. But I would say if the quantity or rum remaining is more than 1/2 to 3/4 cup, then add just around 7 to 8 tbsp of it for making a cake with 1/2 kg maida. Also for my recipe if you use 1/2 kg maida, you need to add 1 and 1/2 tsp of baking powder and you need to add only 300g of sugar (1 and 1/3 cup), not 1/2 kg. And you don't need to add any cocoa or grated chocolate in my recipe. Hope this helps.

Regarding the weight of the final product, that's a great suggestion. Will beat this in mind. For small items like kulkuls and kormolas, the number of pieces could vary greatly depending upon the size of the individual pieces. However, for larger items like cutllets, cupcakes, etc. I always mention how many pieces a recipe will make. Love and God bless!

I have heard (dont know if true), that fresh orange juice, when heated, turns bitter and so, packed juice should be used in such recipes.
Is this true?
Jyotsna, no matter if it's packed orange juice or fresh, the chemical reaction that brings out a slight bitterness in the orange juice will be the same. Interestingly, orange juice is also had warm after infusing it with spices.

Sure, this will take some time, for there's a long list of ingredients.
For approx. 200g dry fruits
30g dates, chopped (approx 3 tbsp)
30g candied cherries,
40g (1/4 cup) golden raisins
40g (1/4 cup) black raisins, chopped
40g (1/4 cup) tutti fruti (candied peel)
25g dried apricots, chopped (4 Nos.)
2 - 3 tbsp cashew nuts, chopped
2 - 3 tbsp almonds, chopped
Juice of 1 orange
1.5 tbsp water
1 tsp orange zest
90g (¾ cup) maida (all-purpose flour)
55g (1/4 cup) sugar
70g (5 tbsp) salted butter
1 egg
1/4 tsp baking powder
3/4 tsp rum extract / vanilla extract
Spice Mix:
1/2 tsp ground cinnamon
1/2 tsp dried ginger powder/grated ginger
1/4 tsp grated nutmeg
3 cloves, finely ground
Caramel Syrup:
3 tbsp sugar (40g) + 1 tsp water
2 tbsp water
Ideally, you will need a 5-inch round pan. But you could also use a 6-inch pan, though it will mean a lower height for the cake.

Wht is weight of the cake ?
It's a heavy cake, RVS. And though I hadn't weighed it, I would say roughly 1.5 kg or a little less.

And yes, you have to add around 6 tbspof rum and 6 tbsp of orange juice (3/4 cup in all) while boiling the fruit. After the cake has baked and cooled down, you could poke holes into the top of the cake and pour 3 - 4 tbsp more of rum through the holes and the top of the cake. Let it rest for half an hour and then wrap it up.
